And what a delicious pumpkin marmalade! For this dessert, fragrant nutmeg varieties “butternut” or “golden pear”are suitable. Chop 800 g of pumpkin pulp into cubes and cook it in 200 ml of water until soft, add 300 g of sugar and cook again until the sugar completely dissolves. Pour the juice of half a lemon into a saucepan and mix well.

In order to thicken the pumpkin, it is best not to use gelatin, but agar-agar, which is made from seaweed. The fact is that sweets with agar give a denser consistency and turn out to be lighter, tasty and tender.
