Easy and original recipe for your Yule log

For the sponge cake

4 eggs

120 g sugar

75 g flour

1/2 package of baking powder

 

For the cream

100 g sugar

2 eggs

200 g butter

200 g chocolate

For the sponge cake:

  • Whisk the egg yolks and sugar and put them in a double boiler
  • Beat with an electric whisk until the mixture turns white (about 10 min)
  • Take out of the bain-marie then add the flour and baking powder. Mix gently, then add the egg whites
  • Spread the dough on a buttered and floured baking sheet
  • Bake 20 to 25 minutes at 150 ° C in a hot oven
  • Take a wet cloth: put the dough in it and roll it
  • Leave to stand for a few hours, or even overnight

For the cream:

  • Whisk the eggs and sugar and put them in a double boiler
  • Beat with an electric whisk: the mixture should “swell” (about 10 min)
  • Take out of the double boiler, then add the soft butter
  • Then add the melted chocolate
  • Put in the fridge so that the mixture hardens

For the dressage:

  • Unroll the sponge cake then spread the cream with a spatula
  • Roll the cake, cut the edges (set them aside), then put the cream on the outside of the sponge cake

For decoration:

  • Pass a fork over the entire log to draw the “bark”, roll one of the cut edges of the sponge cake and place it on top of the log, then cover it with chocolate cream (to make a tree stump)

Tip or tip:
