The complexity of the preparation technology affects the cost of the finished product, so the price of white tea is quite high. This is also influenced by the fact that only the upper shoots of the tea bush are harvested by hand. Raw materials for an elite variety must be selected: buds covered with a delicate “fluff”, types and leaves.

Half of the success of brewing tea correctly lies in the use of high quality pure water. It should not contain any impurities, foreign odors. Therefore tap water is not recommended.

The second condition for making white tea is the choice of beautiful dishes and accessories. This allows you to organize a tea ceremony according to all the rules. The cookware set includes a kettle for boiling, a kettle for brewing, a spoon and a napkin. The kettle for boiling water must not be descaled mechanically or with chemicals, as this negatively affects the taste of the drink. The teapot can be cleaned without the use of synthetic agents. It is advisable to choose earthenware, earthenware or porcelain dishes, as they retain the authentic taste of the tea. You can’t choose a metal spoon. The napkin is necessary to keep the drink warm and retain the aroma.

First you need to boil the water. But even at this stage, attention should be paid to the features of the process. It is not enough to simply bring the water to the boiling point. You need to wait for the moment when the water begins to boil intensively in the kettle. The correct boiling water for white tea should have a “white key” state: abundant bubbles lead to the formation of a white color. Large bubbles are not recommended for proper brewing of any type of tea.

A small amount of boiling water should be poured over the teapot so that its temperature is as similar as possible to the temperature of the water. Then a small amount of tea leaves is poured into a bowl and poured with boiling water. The optimal amount of tea is calculated according to the following scheme: 1 tsp. per cup and 1 tsp. directly onto the kettle. First, you need to fill the kettle by a third so that the tea leaves can infuse, and then the volume of water is increased to half, stirring with a spoon.

Depending on the variety, the tea is left to stand for a certain time, which is indicated on the package. It should be noted that the strength of the tea does not depend on the duration of exposure. If the drink is brewed longer than the specified time, the taste of the drink becomes more bitter. A sign of readiness is the formation of yellow foam. Its absence indicates the wrong brewing or the choice of low-quality tea. The foam does not need to be removed, it should be mixed with a spoon, and then proceed directly to tea drinking.

There is a “cold” method of making tea: dry tea leaves must be poured with cold water, and then kept in the refrigerator for 5-6 hours. The result is an excellent tonic that has beneficial properties and tastes like birch sap.
