Chicken dishes are very popular among lovers of home cooking, but it is not always possible to pamper yourself with them: cooking chicken thighs is considered a relatively complex dish, more suitable for the holidays. But there are also simple recipes that allow you to enjoy a delicious dish on ordinary days.
Chicken thigh rolls with mushrooms
Treat yourself and your loved ones with delicious and mouth-watering chicken thigh rolls with mushrooms. To prepare the dish you will need:
– 6 chicken thighs; – 300 grams of fresh mushrooms; – butter; – 1 onion; – lemon juice.
Rinse and slice fresh mushrooms and onion. Heat 2 tablespoons of butter in a skillet, chop the onion and simmer over high heat. Add mushrooms. Fry them over medium heat for 10 minutes, stirring occasionally. Remove from heat, salt and cool slightly.
Rinse 6 chicken thighs. Sprinkle them with lemon juice and salt to taste. Make an incision on the side of the thighs to the bone, cut out the bone. Open the fillet in the form of a book and beat lightly, placing it skin side down. Place a couple of tablespoons of ready-made mushrooms in the center of each piece, then roll the fillets into rolls and secure with wooden skewers or toothpicks. Place the rolls in a baking dish, grease it with oil, bake in an oven preheated to 200 ° C for 40 minutes. Garnish with herbs before serving.
For crisper and more flavorful thigh rolls, you can pre-roll them in mayonnaise or honey.
Chicken thighs marinated
You can cook chicken thighs in the oven in a lemon marinade for a holiday or just for dinner with your family. The following ingredients are required:
– 5 chicken thighs; – 1 lemon; – sugar; – 300 ml of chicken broth; – salt; – white pepper; – 250 ml of cream.
Carefully remove the zest from the lemon, but do not discard it, but grind it on a grater or in a blender. Squeeze the juice out of the peeled fruit. In a large bowl, combine the zest, lemon juice, tablespoon sugar, white pepper, and salt to taste. Pour 5 chicken thighs with the resulting marinade and, stirring, leave to marinate for 30 minutes.
You can add onion rings or some spices to the marinade to add Georgian flavor to the dish.
Place the marinated thighs in a baking dish, greased with oil, and bake in a preheated oven to 200 ° C for 30 minutes. Pour the remaining marinade into a saucepan, add 300 ml of chicken stock and 250 ml of cream, and stir. Bring the resulting sauce to a boil, pepper, salt to taste and cook for 15 minutes over low heat, stirring often. Put the prepared thighs on a platter, pour over with hot sauce and decorate the composition with herbs.
