White bean cupcakes with jam

Preparation for 30 cupcakes

150 g of cooked white beans (60 g dry) 


50 g sugar 


100 g butter 


45 g of cornstarch 


2 big eggs 


80 g of red fruit jam 


 20 g icing sugar 


Preparation

1. Preheat the oven to 170 ° C 


2. Gently heat the beans with the sugar in a bowl over a double boiler. 


3. Mix off the heat, add the butter in pieces so that it melts.

4. Separate the whites from the yolks and beat the whites until stiff. 


5. In the salad bowl, add the egg yolks, cornstarch, red berry jam, stir and gently incorporate the egg whites. 


6. Pour into the small molds without filling them to the top.

7. Bake in the oven at 170 ° C for 20 minutes. 


8. Leave to cool and make an icing with icing sugar and a little water. 


9. Brush your cakes with the frosting.

How to cook white beans

To have 150 g of cooked white beans, start with about 60 g of dry product. Mandatory soaking: 12 hours in 2 volumes of water – promotes digestion. Rinse with cold water. Cook, starting with cold water in 3 parts cold unsalted water.
