Milk, eggs, sugar, butter or margarine, salt, heated to 30-35 ° C, are added to the sifted flour, and the dough is kneaded. The prepared dough is kept for 30-40 minutes to swell the gluten and give the dough elasticity, after which it is rolled into a layer 1,5-2 mm thick. Minced meat balls weighing 10 g are placed on the dough at a distance of 3-1 cm from each other. The edges of the dough are raised, the minced meat is covered with it, after which the dumplings are cut out with a special device or a mold with pointed edges. Weight 1 pc. should be 20 g. The remaining dough scraps are used for re-rolling. Formed dumplings are placed in one row on floured wooden trays and stored at temperatures below 0 ° C before cooking. Prepared lungs for minced meat are cut and boiled in salted water, cooled and passed through a meat grinder. Boiled mushrooms are finely chopped and fried along with finely chopped onions. Chopped by-products are combined with mushrooms and onions, salt and pepper are added and mixed thoroughly. Prepared dumplings are cooked in boiling salted water (for 1 kg of dumplings 4 liters of water and 2 g of salt) at low boil for 5-7 minutes. When the dumplings float to the surface, they are taken out and portioned in 9 pieces. per serving. When leaving, dumplings are poured with melted butter or margarine, or sour cream, or vinegar. Old Russian dumplings with offal rich in vitamins and minerals such as: vitamin A – 11,1%, vitamin B2 – 16,7%, vitamin B5 – 14%, vitamin B12 – 70%, vitamin PP – 27%, phosphorus – 21,2%, iron – 33,9%, cobalt – 27%, copper – 11,8%, molybdenum – 12,6%, chromium – 14,6%
  • Vitamin A is responsible for normal development, reproductive function, skin and eye health, and maintaining immunity.
  • Vitamin B2 participates in redox reactions, enhances the color sensitivity of the visual analyzer and dark adaptation. Insufficient intake of vitamin B2 is accompanied by a violation of the condition of the skin, mucous membranes, impaired light and twilight vision.
  • Vitamin B5 participates in protein, fat, carbohydrate metabolism, cholesterol metabolism, the synthesis of a number of hormones, hemoglobin, promotes the absorption of amino acids and sugars in the intestine, supports the function of the adrenal cortex. Lack of pantothenic acid can lead to damage to the skin and mucous membranes.
  • Vitamin B12 plays an important role in the metabolism and conversion of amino acids. Folate and vitamin B12 are interrelated vitamins and are involved in blood formation. Lack of vitamin B12 leads to the development of partial or secondary folate deficiency, as well as anemia, leukopenia, thrombocytopenia.
  • Vitamin PP participates in redox reactions of energy metabolism. Insufficient vitamin intake is accompanied by disruption of the normal state of the skin, gastrointestinal tract and nervous system.
  • Phosphorus takes part in many physiological processes, including energy metabolism, regulates acid-base balance, is a part of phospholipids, nucleotides and nucleic acids, is necessary for the mineralization of bones and teeth. Deficiency leads to anorexia, anemia, rickets.
  • Iron is a part of proteins of various functions, including enzymes. Participates in the transport of electrons, oxygen, ensures the course of redox reactions and activation of peroxidation. Insufficient consumption leads to hypochromic anemia, myoglobin-deficient atony of skeletal muscles, increased fatigue, myocardiopathy, atrophic gastritis.
  • Cobalt is part of vitamin B12. Activates enzymes of fatty acid metabolism and folic acid metabolism.
  • Copper is a part of enzymes with redox activity and involved in iron metabolism, stimulates the absorption of proteins and carbohydrates. Participates in the processes of providing the tissues of the human body with oxygen. The deficiency is manifested by disorders in the formation of the cardiovascular system and skeleton, the development of connective tissue dysplasia.
  • Molybdenum is a cofactor of many enzymes that provide the metabolism of sulfur-containing amino acids, purines and pyrimidines.
  • Chrome participates in the regulation of blood glucose levels, enhancing the effect of insulin. Deficiency leads to decreased glucose tolerance.
