Method of preparation

Cut the peeled herring into pieces, and the vegetables and apples into thin slices. Prepare the sauce (grind the yolk of a hard-boiled egg with salt, mustard and butter, adding it in small portions to make the sauce thick, then add vinegar). Before serving, mix the chopped food with the sauce and finely chopped onion and parsley or dill. Put the salad in a salad bowl and garnish with slices of beetroot, herring and egg white.
