Useful properties of champignons

Champignons are the most successfully cultivated mushrooms in America and Europe. By the way, translated from French, the word “champignon” means “mushroom”. In many European countries, of all types of mushrooms, exclusively artificially grown champignons are consumed, and for good reason. They contain a fairly large amount of proteins and carbohydrates, as well as all the important minerals and vitamins.

In terms of phosphorus content, these mushrooms are in no way inferior to seafood and fish. Along with legumes and soy products, mushrooms are used in vegetarian diets, and due to their low calorie content, they can be used in weight loss diets. These mushrooms do not contain sugar or fat, so they can be included in the diet of people with diabetes. Champignons also contain a substance that lowers blood cholesterol levels, which is why they are recommended by nutritionists for obesity.

Salad recipe with raw mushrooms, rucola and parmesan

Champignon salad with rucola and parmesan will be an excellent addition to the festive table. It is also very healthy and low in calories.

For raw champignon salad, use only fresh, firm and strong mushrooms

To prepare this dish you will need the following ingredients: – raw mushrooms – 300 g; – arugula – 1 bunch; – grated parmesan – 2 tablespoons; – cherry tomatoes – 100 g; – green onions – 1 bunch; – olive oil – 2 tablespoons; – lemon juice – 2 tablespoons; – garlic – 2 cloves; – honey – 1 tsp; – pepper, hot chili sauce – to taste.

Before preparing the salad with raw mushrooms, peel or wipe the champignons with a damp cloth. You should not wash them in water, as they are distinguished by their ability to absorb a lot of moisture. As a result, the washed raw mushroom salad will turn out to be too watery.

Peel the raw mushrooms, cut into thin slices and sprinkle with lemon juice so that they do not darken. Rinse and dry the rucola, rub with coarse parmesan flakes. For salad dressing, combine finely chopped garlic, honey, olive oil, lemon juice, chili sauce, pepper and salt to taste. Put arugula, mushrooms, chopped cherry tomatoes on a dish. Pour the dressing over the salad, sprinkle with Parmesan cheese and chopped green onions.
