The composition of garlic includes carotene, essential oils, vitamins C, B1, B2, B9, and PP, as well as organic acids and beneficial fiber.
Why you should include garlic in the diet

2. To improve appetite. Garlic activates the production of gastric juice, a positive effect on the gastrointestinal tract and improves metabolism.
3. It has a tonic effect and improves immunity.
4. Lowers blood pressure and prevents the formation of cholesterol plaques.

Due to the presence of essential oils, wild garlic has a strong garlic smell, so it is added to fresh salads. It’s possible to use it in pie fillings, serve with meat dishes, and add to soups.
What to cook from a wild garlic
Soup with wild garlic
You will need:
- Bunch garlic
- Rhubarb – 2 stalks
- Carrot – 1 PC.
- Onion – 1 PC.
- A quarter of celery root
- Flour – 1 tbsp
- Olive oil – 1 tbsp
- Boiled egg – 1 PC.
- Breadcrumbs – 1 tbsp
Method of preparation:
1. Remove greens from stems and rinse thoroughly.
2. Cook ordinary vegetable broth (carrot, celery, a chopped stalk of rhubarb, it is possible to taste add fresh mushrooms). In the broth, put the chopped garlic and cook for 10 minutes.
3. Prepare the filling. Finely chopped onion fry in oil. When the onions become soft and will become a Golden color, stir in a spoonful of flour and boil, stirring occasionally. Pour in the soup and let it simmer.
4. Boiled egg cut in half, roll in breadcrumbs, fry in oil, and dip in the finished soup. The soup of garlic is perfect in cream form.
Pickled leek
Ingredients:
- Wild garlic – 400 g
- Garlic – 2-4 cloves
- Bay leaf – 2 PCs.
- Water – 4 cups
- Vinegar 9% – 1 Cup
- Salt – 40-80 g
- Sugar – 50-100 g
- Oil – to taste
- Spices – to taste
Method of preparation:
- For marinating use the lower part of the sheet with the onion. Fresh herbs garlic wash.
- At the bottom of the jars put garlic and Bay leaf, then prepared the green of wild garlic.
- Pour the hot marinade and sterilize in boiling water 20-25 min.
Salad with wild garlic
Ingredients:
- Wild garlic – 200 gr.
- Cucumbers – 2 PCs.
- Parsley – 50 gr.
- Chicken eggs – 2 PCs.
- Mayonnaise – 200 gr.
- Salt – to taste
Method of preparation:
- The garlic and greens wash and finely chop. Cucumbers too and cut into half-rings.
- Eggs cut into small cubes.
- All the chopped ingredients pour into a bowl in which we mix, salt, add mayonnaise, mix.
