Many people are frightened by the laboriousness of the process, but in fact, everything is not at all complicated. Take 1 liter of milk, some (preferably homemade) sour cream and a couple of tablespoons of sugar. Pour milk into an enamel saucepan and put on high heat. Once the milk has boiled, set the flame to a minimum and simmer the milk for an hour. The liquid in the saucepan should change to a light beige color. Add sugar if you want the drink to be sweet. Remove the pan from heat and refrigerate to 37 degrees. After that add 1-2 tablespoons of sour cream, mix everything thoroughly. Place a lid on the pot and place in a warm place. After 9 hours, homemade fermented baked milk is ready for use.

How to choose a delicious fermented baked milk?

If you don’t want to bother making homemade fermented baked milk, you can look for a ready-made drink in the supermarket. In order not to be disappointed in your choice, follow these rules:

– you should never take fermented baked milk that was on the shelves, and not in the refrigerator; – it is better to give preference to such a fermented milk product that is poured into glass bottles; – be sure to pay attention to the date of manufacture (the fresher the fermented baked milk, the more beneficial bacteria it contains) ; – make sure that the fermented baked milk contains no flavorings, stabilizers and dyes.

At home, before drinking fermented baked milk, pour it into a glass and examine it after a couple of minutes. In a high-quality drink, whey will separate, but its amount will not exceed 3% of the total mass of the product. The smell of fresh fermented baked milk should not be too harsh, and the taste should not be too sour.
