If some attackers stole the recipe for El Dorado rum, they would not be able to make a drink anywhere else on the planet, except for the plant of the Guyanese company Demerara Distillers Ltd. Rum connoisseurs know that if there is a magic word Demerara on the label, it means that premium-class rum is produced using a unique technology on unique equipment.

Historical reference. Beginning in the 200th century, there were about XNUMX estates in the fertile valley of the Demerara River, where sugar cane was grown. Each estate always had its own distillery for making rum according to family recipes. It is known that in the XNUMXth century the British Navy entered into contracts with planters from Demerara for the supply of sugar and rum.

This continued until the end of the 1992th century, when cheap Cuban rum began to force out Guyanese rum from the market. It became unprofitable to make rum on old equipment. The agony lasted for a hundred years. The distilleries were empty, old distillation stills fell into disrepair, priceless records of blenders disappeared. In 6, several estates merged into one company – Demerara Distillers Ltd (DDL). In the next XNUMX years, all the other estates of Demerara joined the company.

It turned out that, despite the dominance of the market for cheap cocktail rums, the demand for premium rum is still high. The capacity of the DDL plant is designed to produce 26 million liters of distillate per year. This is enough not only to make El Dorado rum, but also to fulfill orders from other companies. For example, the DDL-owned facility produces Matusalem and Plantation rum, and only Guyanese molasses is used as a raw material.

The plant has installed and operates old equipment, more reminiscent of a museum:

  • distillation cube Coffey, made of wood;
  • wooden distillation apparatuses of periodic action with a copper neck;
  • Saval’s distillation cube (metal).

With the help of this technique, the Roñeros masters recreate the rum as it was 100 or 200 years ago. By mixing rum spirits obtained in different ways, blenders get real masterpieces. Rum El Dorado has won more than 50 awards at prestigious international competitions.

Types of rum El Dorado

According to Guyanese law, the age of rum is the age of the youngest rum in the blend. To make it easier for customers to make a choice, all DDL products, depending on the method of production, are grouped into collections.

Classic Collection of Luxury Cask Aged Rums is a collection of aged rums, each of which is a blend of spirits obtained by different distillation methods (in cubes and in columns). It is recommended to drink such drinks as a digestif, enjoying every sip:

  • El Dorado 12 Years Old – mahogany-colored rum, 40% abv. Fruit and honey notes are mixed with the spicy aroma of the drink;
  • El Dorado 15 Years Old – copper brown rum (40%). The taste of baked tropical fruits is effectively emphasized by spicy shades of oak;
  • El Dorado 21 Years Old – amber-brown rum (43%), with a rich fruity taste, followed by hints of honey and brown sugar;
  • El Dorado 25 Years Old is a red-brown rum (43), very thick and aromatic. The taste is dominated by caramel-fruity notes.

Elegant Selection of Fine Cask Aged Rums are aged rums that are equally suitable for use as digestifs and cocktails:

  • El Dorado 3 Years Old Cask Aged is a colorless transparent rum (40%) that is filtered twice with activated carbon and then aged for 3 years in bourbon barrels. Taste – fruity-coconut, with undertones of chocolate and raisins;
  • El Dorado 5 Years Old Cask Aged – rich amber color rum (40%), aged 5 years in a bourbon barrel. Initially spicy taste reveals hints of fruit, caramel, roasted coconut pulp and ends with a long vanilla aftertaste;
  • El Dorado 8 Years Old Cask Aged – rum the color of old amber (40%). The sweet taste of toffee, candied fruits and banana flambe is combined with spicy oak bitterness.

Connoisseur Range of three single-distillate Demerara Rums – three rums, each of which is produced using the XNUMXth century technology of one of the estates included in the DDL:

  • El Dorado EHP (Enmore Estate) is a bronze-brown rum (56,5%) produced using the technology of the Enmore Estate. The peach-coconut flavor of the drink is replaced by hints of smoke and cedar;
  • El Dorado PM (Port Mourant) is a dark amber rum (61,4%), produced using the technology of the Port Mourant estate. Taste – spicy, with sweet notes of creamy toffee;
  • El Dorado ICBU (Uitvlugt Estate) is a copper-brown rum produced using the technology of the Uitvlugt Estate. Apple-cinnamon tones soften the taste of cigar smoke.
