Beetroot Red (Beetroot Red, Betanin, betanin, E162) is a red dye.

Chemical formula C24H27N2O13.

Betanin is obtained from food beets (most often from juice extract). It is considered safe to eat. Betanin may contain nitrates (depending on beet growing conditions).

The color of betanin depends on the pH — from bright red to blue-purple when the pH increases.

Betanin is destroyed by light, heat, and oxygen. Therefore, it is used in frozen and dried products, as well as in products with a short shelf life.

Betanin is used for coloring meat and sausages, ice cream and drinks. It is also often added to soups, products with tomatoes and bacon.

Sometimes used as an antioxidant.
