Bean and berry muffins

Preparation for 30 small bites

Preparation time: 20 minutes

            120 g cooked red beans (60 g dry) 


            80 g sugar 


            80 g heavy cream or 1 whole milk yogurt or 1 Greek yogurt. If you opt for yogurt, add a teaspoon of baking powder.

            40 g of cornstarch 


            2 big eggs 


            125 g of summer berries (raspberries, blackberries, blackcurrants) 


    

Preparation 


1. Preheat the oven to 170 ° C. 


2. Gently heat the beans with the sugar and a pinch of vanilla powder.

3. Mix away from the heat, add the eggs and heavy cream or yogurt to

obtain a homogeneous whole.

4. Add cornstarch and baking powder if you used yogurt and mix well. 


5. Pour into the small silicone molds without filling them, place on top of the fruit

reds (blackberries, raspberries…).

6. Bake at 170 ° C for 15 minutes and obtain a golden puffed appearance.

– To have 120 g of cooked red beans, start with about 60 g of dry product

– Mandatory soaking: 12 h in 2 volumes of water


- Rinse with cold water


– Cook starting with cold water in 3 parts cold unsalted water
