What to do with liver broth?
After boiling the liver (beef or pork) for salad and other dishes, a rich broth remains, from which a breathtaking aroma emanates. It is not necessary to pour it out, as many dishes are prepared on the basis of broth. Few people know that you can make soup from liver broth, the roots of which come from Slavic cuisine. It doesn’t matter what kind of cereal to use in the soup – rice, buckwheat, millet will do. You can also make potato soup with vegetables. To obtain a pronounced aroma and taste of the soup, stewed liver with onions and carrots are added to the broth. The taste becomes rich and the calorie content of the dish increases. You can prepare the sauce using a decoction – the liver broth will make the taste unusual and light. Common sauce for the second course of broth. Its preparation will not take long. Greens, salt, spices and a delicious dish is ready in a couple of minutes. In Russia, they often cooked pickle with liver, but unfortunately now few have tried or heard of the dish.
