What to cook for the Old New Year

Old New Year is an unusual holiday. In fact, this is the same New Year, but according to the old, Julian calendar. It is celebrated, as usual, in the countries of the former USSR, as well as in Greece, Macedonia, Serbia, Romania, Montenegro and Switzerland.

And, of course, like the New Year, this holiday involves a feast. What should you cook? We are in Food&mood decided: since this is a holiday new years from old style, it will be logical to prepare traditional New Year’s dishes in a new, unusual sound.

So, here they are – jellied meat, Russian salad and herring under a fur coat for the Old Year in a new way.

 

Olivier roll

Ingredients:

  • 100 g. Boiled sausage
  • 2 pcs. Potatoes
  • 2 pcs. Eggs
  • 2 pcs. Pickled cucumbers
  • 1 PC. Carrot
  • 1 PC. Thin pita leaf
  • 2 tbsp. l. Processed cheese
  • 1 st. l. Mayonnaise

Preparation:

1. Peel and boil vegetables.

2. Spread the pita bread and brush it with melted cheese.

3. Grate or chop the sausage and vegetables.

4. Spread in layers: sausage, carrots, potatoes, pickled cucumbers, mayonnaise, eggs.

5. Roll up, cut into slices, put on a platter and garnish with herbs.

How else can you make Olivier? This can be an Olivier made from baked vegetables, in which all vitamins are preserved to the maximum. 

Herring under a fur coat, canapes

Ingredients

  • 1 PC. Beetroot, medium
  • 2 pcs. Potatoes
  • 300 gr. Herring fillet
  • 1 PC. Borodinsky bread
  • 3-4 feathers. Green onions

Preparation:

1. Boil carrots and potatoes and cool, then peel them.

2. Wash the beets, wrap in foil and bake in the oven at 180 C for an hour. Then cool and clean.

3. Cut all vegetables into small 0,5 cm thick slices. Finely chop the onion feathers with a knife.

4. If the fillet is whole, then it is necessary to cut it into medium pieces.

5. Cut the bread into small, convenient slices. On slices of bread, put in turn beets, a slice of potatoes, carrots and herring. Fasten with a skewer.

6. Sprinkle with finely chopped green onions before serving.

How else to cook Herring under a fur coat? It can be a Jelly version of this salad or a Fur coat from Ruslan Senichkin in an interesting presentation. 

Jellied eggs

Ingredients:

  • 10 pieces. Eggshell
  • 20 Gelatin
  • 1,5-2 cups. chicken broth
  • 150-200 g. Ham
  • 0,5 cans. Canned corn or green peas
  • 1-2 pcs. Bell pepper
  • Taste. Parsley, freshly ground pepper, salt

Preparation:

1. Prepare chicken broth: rinse the chicken with cold water. Pour water into a saucepan, add chicken and bring to a boil. Remove foam and reduce heat. Add the onion and cook for about an hour, with a low boil, until the meat is cooked well and easily separates from the bones. 15 minutes before readiness, salt the broth, add bay leaves and peppercorns. Remove the onion and spices from the finished broth. Remove the chicken from the broth, separate the meat from the bones and chop. Strain the broth through cheesecloth.

2. Soak gelatin in a glass of chilled broth and leave to swell for 1 hour.

Put the swollen gelatin on the stove and heat, stirring occasionally, over low heat until the gelatin is completely dissolved (do not bring to a boil).

3. Wash and dry eggs. From the blunt end of the egg, make a small hole with a knife and expand the hole to 1,5-2 cm. Pour the contents of the eggs (white and yolk) and use for cooking other dishes (they will not be needed in this recipe). Rinse empty eggshells well in a soap and soda solution and rinse thoroughly with running water.

4. Prepared washed and dried eggshells for convenience, put in an egg tray.

5. Cut the ham into cubes. Drain the liquid from green peas or corn. Cut the bell pepper into cubes (it will be more beautiful if you take peppers of different colors).

6. At the bottom of an empty eggshell, put pieces of bell pepper and leaves of greenery.

Lay on top, alternating, ham, corn, pepper and leaves of greens – thus fill all the free space of the eggshell to the top. And pour the broth with the gelatin dissolved in it.

7. Place the eggs in a cool place until they become cold.

8. Before serving, peel the eggs (like an ordinary boiled egg) and put the aspic on a dish.  

How else can you make aspic? It can be a jellied meat cake “Leshy” or a jellied pie “Mushrooms in captivity”.
