What does blue garlic mean?
Garlic added to mushrooms when pickled for the winter can sometimes change the usual color to blue. There is a scientific explanation for this. Garlic pigmentation occurs due to a violation of its integrity, during which the constituents of garlic (enzymes, essential oils) react. At this point, the alinase enzyme promotes the decomposition of alliin, which provokes the breakdown of essential oils into sulfides and sulfates. One part of organic compounds forms thiol, pyruvic acid and ammonia. The second releases the pigments responsible for the uncharacteristic blue discoloration of the garlic.
The probability and intensity of pigmentation of this vegetable plant is influenced by a number of accompanying factors: growing and storage conditions, maturity, acidity and temperature during processing. In other words, the matter is not at all about mushrooms and the color of garlic does not affect the edibility of honey mushrooms.
