Wafer rolls with condensed milk are a favorite treat from childhood. They were eaten hot, at the risk of getting burned, because there was simply no strength to wait for the delicacy to cool down.

Cooking the dough for wafer rolls

Wafer rolls are a sweet delicacy that was considered the signature dish of Soviet housewives. They were filled with a wide variety of fillings – from nuts mixed with honey to a savory mixture of sausage, cheese, and tomato. But the most popular were the tubes with boiled condensed milk. And although the filling was the same, each housewife tried to improve the recipe for waffle dough, to make them thinner, crispy and crispy. However, all experiments with a waffle iron began with the simplest and fastest traditional recipe, which included the following ingredients:

You need to bake the tubes after the waffle iron reaches the maximum heating temperature. The apparatus must be greased with vegetable oil or margarine, pour half a ladle of dough into the center and close the lid

Margarine must be removed from the refrigerator in advance so that it becomes at room temperature. Gently mix it with flour in a large container. Add sugar and eggs. For fluffier waffles, beat the whites separately and add into the dough after the yolks. Then stir gently, being careful not to damage the fragile white foam.

Another proven recipe is with the addition of milk. This delicacy turns out to be more tender, a bit like dense pancakes. To prepare it, you need to take:

The waffles are cooked for three to five minutes. Determining that it’s time to take them off is simple: the dough becomes a beautiful golden hue, and the edges are toasted. You need to roll up the tubes immediately after removing from the waffle iron

– flour (2 cups, about 250 g); – baking powder and salt (1 tsp each); – sugar and vegetable oil (2 tablespoons each); – milk (2 glasses); – eggs (2 pcs).

Combine flour, salt, baking powder and sugar in a large container. Then add milk, eggs and vegetable oil. The dough turns out to be quite liquid, it is more convenient to mix it with a mixer.

Waffle filling – famous condensed milk

The most delicious condensed milk for waffles is boiled. It has a unique caramel flavor, as well as the desired dense consistency. You can cook condensed milk yourself, it will take 2–2,5 hours. Or buy a ready-made one. Be careful when buying treats in the store. The product should contain only milk and sugar. All additives in the form of palm oil, dyes and preservatives make condensed milk less tasty and sometimes harmful to the body.

You can fill the waffles with condensed milk immediately after cooking. The most convenient way to do this is with a pastry bag. But even with a teaspoon, you can easily fill the delicacy with the filling. You just need to wait until the tubes have cooled down a little.
