Salad with vegetables and seafood is a whole bunch of trace elements necessary for the human body. By combining amazing seafood and fruits from your own garden, you can surprise your family and friends at home. Even the New Year’s Olivier, which has set the teeth on edge, will be completely transformed, it is worth replacing the high-calorie sausage with shrimps and making your own dressing.
Cooking Olivier salad with shrimps
The classic winter salad is traditionally seasoned with store-bought mayonnaise – a sauce that may be tasty, but not very healthy. According to nutritionists, homemade counterparts are much lower in calories, moreover, they do not contain harmful food additives. And if you add shrimp rich in iodine and potassium instead of boring boiled sausage, the heavy meal turns into a nutritious and valuable seafood salad.
Boiled-frozen raw materials (for example, Atlantic shrimps) must first be immersed in boiling water, but for no more than 2-3 minutes – otherwise the meat will become tough and lose its natural juiciness. Seafood that has not been cooked before freezing must be cooked for 5 (small carcasses) to 10 (king prawns) minutes. After that, cool them and clean them of the head, entrails and shell.
Cooked-frozen seafood can be thawed at room temperature in a dish covered with a paper napkin. Then the carcasses will acquire extraordinary tenderness, and the beneficial substances will not be destroyed by heat treatment.
To prepare a shrimp salad with vegetables, you will need the following set of products:
– peeled defrosted shrimp (half a kilo); – potatoes (2 pcs.); – fresh cucumbers (2 pcs.); – lightly salted cucumber (1 pc.); – canned green peas (100 g); – eggs (4 pcs.); – homemade mayonnaise and dill greens to taste.
Boil carrots and potatoes, hard-boiled eggs and cool in advance. Peel all ingredients and cut into small cubes. It is better to add cucumbers both lightly salted for a pungent taste, and fresh, then a vegetable salad with shrimps will be lighter. Add to the resulting mixture of products the green peas, previously thrown on a sieve, and then season the dish with homemade sauce. Put chopped greens on top. Similarly, you can prepare a winter salad with shrimp and squid, or add a whole seafood platter to this dish.
To preserve the maximum amount of nutrients in salad greens, it is recommended to chop it not very finely with a ceramic knife or tear it with your hands
Homemade mayonnaise for winter salad with shrimps
Prepare the sauce for vegetable salad with shrimps carefully and with love, because the dressing is able to introduce radically new nuances of tastes and aromas. For mayonnaise, prepare:
– refined sunflower oil (400 g); – raw eggs (2 pcs.); – apple cider vinegar (1 tablespoon); – freshly ground black pepper and “Extra” salt to taste.
Pour oil into a mixer vessel, beat in fresh eggs, best of all, rustic ones with a bright yellow yolk. Add spices and vinegar to the resulting mixture, then beat everything with a broom. When the sauce acquires a creamy consistency and becomes completely homogeneous, you can eat it.
