Gourmets have the opportunity to taste seafood at depth, right in the habitat of seafood delicacies. To do this, you will need to come to the southern point of the Norwegian coast, to the commune of Linnesnes.
It was there that the restaurant opened in the form of the sunken Under periscope, which goes 5 meters into the North Sea. The unique building of the Under restaurant is made in the form of a concrete “pipe” 34 meters long.
The authors of the idea – the architectural bureau Snøhetta – plan that the part of the restaurant, protruding from the water and lying on the rocks, will eventually turn into a real reef. The smooth streamlined shape of the building was encapsulated in a special concrete shell with a solid and rough surface, which over time will become overgrown with mussels, and the submerged monolith will become an artificial reef.
The developers assure that the structure’s thick concrete walls can withstand the pressure and harsh sea conditions.
Some areas of the restaurant are dedicated to the research center of marine biology. And the restaurant’s establishment consists of 3 levels: an entrance with a wardrobe above the surface of the sea, a bar between the coastline and the ocean, and the main Under hall, located already under water.
To get to the main hall of the restaurant, designed for 40 seats, you need to go down a long staircase. Here guests of the establishment will be able to observe the life of the flora and fauna of the sea through a huge panoramic window: to attract jellyfish and fish, a special LED lighting was arranged.
Dane Nikolai Ellitsgaard became the chef of the gourmet restaurant, who continued the theme of the sea in his signature dishes: he experiments with local products, including seafood, for example, makes desserts from seaweed, which, of course, are very organic in such an institution.
