There are only a few days left until the end of summer, and I want to spend them fruitfully. A little of the allotted time can be devoted to vegetable preparations, so that in winter you can fully enjoy the colorful palette of summer flavors. Simple and tasteful
Let’s start with the classic marinade recipe for zucchini. They are prepared easily and quickly, and the result exceeds all expectations. At the bottom of the sterilized liter cans, put a clove of garlic, a slice of bitter pepper, 2-3 peas of allspice, a leaf of horseradish, bay and currant, an umbrella of dill. Cut 5-6 zucchini into circles and fill the jars tightly with them. Now let’s do the marinade. Bring to a boil 1.5 liters of water, dissolve 1 tsp. sugar, 1 tbsp.l. 9% vinegar and coarse salt. Again, boil the brine and immediately pour it over the zucchini. It remains to seal the cans and wrap them in a blanket. These zucchini can be eaten just like that or added to salads.
With lemon crunch
Some housewives prefer another popular type of marinade – with citric acid. Cut off the caps from 2 kg of small cucumbers and soak in cold water for 2-3 hours. In the washed jars, put 2-3 cherry leaves, bay leaf, 3 cloves of garlic and 2 peas of black pepper. Tightly put the cucumbers in jars, sprinkle with a pinch of dill seeds, pour steep boiling water and leave for 20 minutes. Drain the water, bring it to a boil, add 2 tsp. citric acid, 2 tbsp.l. sugar and rock salt. Pour the marinade over the vegetables, roll up the lids and leave in the heat for 12 hours. These crunchy cucumbers are simply delicious!
Tomato sweetness
Ripe tomatoes are good with apple cider vinegar marinade. In a clean two-liter jar, put 2 peas of allspice, 4 peas of black pepper, 10-12 coriander seeds, 3-4 clove buds, a slice of bitter green pepper and 3 sprigs of parsley. We prick 1.5 kg of tomatoes with a toothpick, put them in a jar, not forgetting about the garlic cloves. Pour the vegetables with boiling water and, after standing for 30 minutes, drain. Bring this water to a boil, dissolve 1½ tbsp sugar and ½ tbsp salt, add 35 ml of apple cider vinegar. We fill a jar with vegetables with marinade, seal it tightly and wrap it with a blanket. A great snack for the whole family is ready!
Eggplant in gold
It is not uncommon to find vegetable preparations based on oil-vinegar marinades. Cut 7-8 eggplants into cubes with peel. Generously pour them with salt and leave for 4-6 hours. Then we wash the eggplants from the salt and throw them in a colander. Heat 150 ml of vegetable oil in a saucepan, lay the eggplants and, stirring with a wooden spatula, passeruem for 15 minutes. Add 5 chopped garlic cloves and finely chopped hot red pepper. Pour in 2 tablespoons of 9% vinegar, simmer the vegetables for another 10 minutes. It remains to pour this mixture into sterilized jars and preserve it. This savory snack will successfully complement any dishes.
Bright blank
Canned Bulgarian peppers are a bright and delicious preparation. We suggest making a marinade with aspirin for them. Cut off the stems of 3 kg of sweet peppers, carefully remove the seeds and fleshy partitions, cut each pepper into four parts. Bring 3 liters of water to a boil, add 3-4 peas of allspice, 2 tablespoons of salt and bay leaf. Blanch the vegetables in this mixture for 4-5 minutes, put them in a three-liter jar, throw 2 aspirin tablets, pour the broth and roll up the lids. Home gourmets will be happy!
Honey gift
Vegetable salad for the winter is always a welcome treat. Especially if you prepare an interesting honey marinade for it. We cut 1 kg of onion into half rings, cut 1 kg of sweet pepper into strips, cut 1 kg of small tomatoes into four parts, rub the wetness on a grater. Bring 1 liter of water to a boil in a saucepan, gradually dissolve 100 g of honey in it. Then pour in 100 ml of table 9% vinegar, put 2 tablespoons of salt with a slide. Pour the chopped vegetables into a saucepan and cook them for literally 1-2 minutes. Next, we put them in clean jars, fill them with marinade and seal them. This salad will add juicy summer colors to the winter menu.
Healthy salad in a jar
Cauliflower and celery salad is a pleasure in its own way. We disassemble 1.5 kg of cauliflower into inflorescences. Raw carrots and celery are cleaned and grated. Chop 10 cloves of garlic into strips. Dilute in 1 liter of warm water 100 g of sugar, 2 tablespoons of salt, 100 ml of vegetable oil and add the main ingredient-100 ml of balsamic vinegar. It is he who will give the marinade a seductive note. We put the vegetables in jars, seasoning them with paprika and chili pepper to taste. Now you can fill them with marinade and close the lids tightly. This salad is perfect both in itself and as a side dish.
