Sugar cockerels: how to make at home? Video
Sugar cockerels are hard sweet candies on a stick that were popular in Russia 500 years ago. They became especially widespread in the 70s of the twentieth century and became a favorite delicacy for children and adults.
Sugar cockerels are most commonly used as candy for children, but they have other uses as well. For example, lollipops with the addition of mint, lemon balm or lemon juice can freshen the breath, and eucalyptus, chamomile, honey in the composition give the candy medicinal properties. The absorption of the lollipop also brings a psychological effect, helps to relax, distract from thoughts, and helps in quitting smoking.
Form for making lollipops
To give the candy the appearance of a cockerel, a Christmas tree, a house, a squirrel, you need a special shape that can withstand the melting temperature of sugar, that is, 160 degrees. These can be purchased metal or silicone molds, special heat-resistant plastic. As a last resort, you can make lollipops on a sheet of baking paper – lay out the mass in a thick layer, stick in a stick, and when it cools down a little, give the shape of a cockerel with the help of improvised means.
In order for the bettas to be two-sided, it is necessary to lay out the mass in two symmetrical forms and wait for hardening (stick the stick in only one of them). Then make sugar syrup and mold the two halves into one.

A glass of granulated sugar will require 5 tablespoons of water and a spoonful of vinegar. Better to take apple cider vinegar or grape vinegar so that the candies are also useful. Place all ingredients in a heavy-bottomed saucepan or skillet over low heat. It is important to stir the mass all the time, it should not burn. When the mixture turns light brown, you can add a pinch of food coloring, a spoonful of flavoring.
The forms must be greased with butter or moistened with water, pour a thick mass into them, stick a stick or a toothpick. Leave at room temperature for several hours, then remove from the mold.

Caramel sweets are distinguished by a more delicate milky taste, they are opaque, creamy in color. For a caramel cockerel you will need:
– 200 g of granulated sugar; -100 ml of fat milk or cream; – 30 g of butter; – vanilla.
It is necessary to mix sugar and milk in a bowl with a thick bottom, heat over low heat until a thick coffee-colored mass is obtained. You can check the readiness as follows: drip onto a cold saucer – if the drop is held by a ball, the mass is ready. Put the finished mass in oiled forms, stick in the sticks and leave until solidified.
Resorption of lozenges has a beneficial effect on the throat, the therapeutic components effectively and for a long time affect the sore throat. For medicated lozenges you will need:
– 200 g of sugar; – medicinal herbs (chamomile, string, ginger root, marshmallow root, mint, eucalyptus); – 200 g of water; – 50 g of honey.
First, you should make an infusion of medicinal herbs: grate the root of ginger and marshmallow, chop chamomile flowers, string, mint and eucalyptus leaves. Brew with boiling water, cover and leave in a warm place for 2 hours, then strain. Mix the infusion with sugar, put in a frying pan and heat over low heat, avoiding burning. When the caramel mass is thick enough, add honey, stir and put in molds. Such candies are stored for a long time, so they can be harvested for future use, for several months.
