Method of preparation

Chop the green salad. Cut sausage, potatoes, celery, apples and gherkins into slices and put in a bowl. Mix mayonnaise with a small amount of mustard, finely chopped parsley and tarragon, add vinegar and salt to taste. Season prepared foods with sauce, place in a salad bowl and, if desired, garnish with slices of boiled beetroot, apple and onion rings. The sausage can be replaced with ham.
