Preparation:
1. Heat the oil in a large saucepan, fry the onion and garlic, stirring,
until soft. Add rice, stir until each grain is
completely covered in oil. Add broth, bring to a boil. reduce
fire, and cook, covered with a lid, for 15 minutes, stirring several times.
Remove the pan from the heat and let stand, without removing the lid, for 10 minutes.
2. Meanwhile, heat additional oil in a frying pan. fry
mushrooms, zucchini, peppers and tomatoes, stirring until all vegetables are
soft. Mix rice with vegetables and olives. Serve sprinkled
cheese flakes.
