Restaurant tricks: we prepare the perfect mashed potatoes
 

To prepare mashed potatoes, as in a fine expensive restaurant, you need to remove as much as possible the remnants of moisture, which give the puree a watery taste.

It is necessary not only to carefully drain all the water in which the potatoes were cooked, but also to dry it. What to do?

  1. When the potatoes are cooked, leave them in a hot pan without a lid for 3 minutes or place on a dry hot pan and hold there until the remaining water evaporates.
  2. Then pour into the pan a mixture of equal amounts of milk and cream so that the potatoes were immersed in this mixture for at least a third of the volume.
  3. Turn on low heat under the pan, bring the milk with cream to a boil, add butter and remove from heat.
  4. Then mash the potatoes well.
  5. Then beat the puree with a blender. It will acquire not only a creamy taste, but also a homogeneous silky structure, it will become like cream.
