Other nuts can be used The egg whites are chilled and whipped into a thick foam. Grind the yolks with sugar, add flour, vanillin (for vanilla soufflé), pounded chocolate or cocoa powder (for chocolate soufflé), chopped and fried almonds with sugar (for nut soufflé), dilute with hot milk and, stirring continuously, boil the mixture until thickening.
