Beef, or lamb is cooked in a large piece, then removed from the broth and cut across the fibers, 1-2 pieces per serving. From sifted flour, eggs, salt, water, knead unleavened dough and keep it for 30 minutes. For khinkal, the finished dough is divided into pieces, rolled into a layer 1,5-2 mm thick and cut into rhombuses 40X50 mm, the two ends are connected, giving the product the shape of a shell. Khinkal is placed in a boiling broth and boiled at low boil for 5-7 minutes. When the products float, season with sour cream-garlic, or tomato-garlic seasoning. For sour cream-garlic seasoning, mix sour cream with crushed garlic with salt and dilute with boiled chilled water. For tomato-garlic seasoning, sauté tomato puree with chilled and melt and diluted with boiled chilled water. Khinkal is released along with broth and meat.
