Method of preparation
” The indicated weight of the finished chicken can be increased in accordance with the actual weight of the carcasses received, but not more than 250 g. For the processed chicken, cut the breast lengthwise, then flatten the carcass, sprinkle with salt, grease with sour cream and fry on both sides in a hot pan with butter or in a ketsi (clay pan) under pressure.
