Method of preparation
Cut the chicken into portions, wash and salt. Put the meat in a cauldron with hot vegetable oil and fry a little (2-3 minutes), add the onion, chopped into rings, chopped tomatoes and potatoes to the meat. Add salt and pepper to taste. Pour boiling water over (the water should almost cover the vegetables and meat) and simmer covered until the meat and vegetables are tender. Sprinkle the prepared dish with finely chopped parsley.
