Pink salmon is an inexpensive and affordable variety of fish. Although it is not considered a delicacy, it can be used to prepare a variety of both festive and everyday dishes – snacks, soups. Use pink salmon fillets for roasting with vegetables or making pies.

Zucchini stuffed with pink salmon

Filled with minced pink salmon and two types of cheese, zucchini boats are the perfect main course for a summer lunch or dinner.

You will need: – 3 medium zucchini; – 500 g of pink salmon fillet; – a bunch of fresh basil; – 100 g of hard unleavened cheese, such as emmental or gouda; – 150 g of young goat cheese; – olive oil; – salt and freshly ground black pepper.

Instead of zucchini, you can similarly stuff eggplants or bell peppers.

Wash the zucchini and cut in half lengthwise. Remove the pulp so that you get a boat with a wall thickness of no more than half a centimeter. Then cook the minced meat. Chop the pink salmon fillets into small pieces. Heat the olive oil in a skillet and fry the fish in it for 4-5 minutes. Then add the finely chopped basil and simmer for another 5 minutes. Season with salt and pepper. Place in a separate bowl, add chopped goat cheese.

Fill the zucchini boats with the minced meat. Grate the emmental cheese and sprinkle the zucchini on top. Place them on a greased baking sheet and bake for 30 minutes in an oven heated to 180 ° C. Serve with fresh white bread and light white wine.

This is one of the traditional French fish dishes. This cake is perfect both as an appetizer and as a main course.

You will need: – 1 package of ready-made puff pastry; – 250 g of pink salmon fillet without skin and bones; – 150 g of broccoli; – 3 eggs; – 1 tbsp. low-fat sour cream; – a bunch of green onions and dill; – 50 g butter; – salt.

Sour cream in the recipe can be replaced with heavy cream, in which it is desirable to add 1-2 tbsp. l. flour

Divide the broccoli into inflorescences and boil in salted water for 15 minutes. The cabbage should be soft. Roll out the dough to a thickness of no more than half a centimeter, then place it in a greased baking dish. Preheat the oven to 180 ° C and place the plain pie in it. Bake the dough for 15 minutes until half cooked. It should not brown.

Cut the boiled broccoli and raw fish into cubes. Chop the herbs. Melt the butter in a skillet and fry the pink salmon with broccoli for 5 minutes. Then add herbs and salt. Combine eggs and sour cream in a separate container. Place the fish and broccoli on the bottom of the pie, then pour the egg and sour cream mixture over the dough. Bake the pie for half an hour. Serve warm, accompanied by a green salad topped with balsamic vinegar and olive oil.
