Pancakes with cottage cheese dessert: video recipe

Pancakes with cottage cheese are a traditional Russian dish that is enjoyed by both children and adults. They can be a great dessert after main courses or a perfect addition to tea. A tasty and satisfying option is pancakes with cottage cheese, which can act as a filling or an additional dessert dish.

Pancakes with cottage cheese dessert: recipe

Prepare the following ingredients to make the pancake dough:

– 0,5 liters of fresh or baked milk; – 5 eggs; – a teaspoon of sugar; – a glass of flour; – a tablespoon of sunflower oil; – a pinch of salt; – gelatin; – vanillin and cocoa.

For the curd filling you will need:

– 0,5 kg of high or zero fat cottage cheese (for dessert cream); – 2-3 tablespoons of sugar; – egg yolk; – vanilla sugar.

Crack the eggs in a large bowl and stir well with a whisk to create a liquid mass that is free from egg yolk and protein. Add salt and sugar and stir again until completely fluid.

Add milk, continuing to stir until a light foam appears. Add flour in small portions, slowly and slowly, stirring the dough continuously. You can also add flour by sieving it through a sieve to avoid clumping. Add vegetable oil and stir again.

Do not put the whisk far away and be sure to beat the dough piece without leaving lumps that will inevitably appear

Insist the dough for half an hour so that the salt and sugar are completely dissolved in it, and it turns out to be more homogeneous. After stirring again, start baking the pancakes according to the recipe. Grease the surface of a skillet or crepe maker with butter or vegetable oil and lightly prick over medium heat. Using a ladle, pour the dough evenly and in a thin layer. Wait 30-60 seconds and use a spatula to turn the pancake over until each side is browned.

Cooking curd filling

Start making curd filling for pancakes. Mash the cottage cheese and mix with the rest of the ingredients until you get a homogeneous mass. If you are using the product, you do not need to add sugar and yolk. Sprinkle with vanilla sugar to taste. Put the curd mass on the pancakes, wrapping them in envelopes, as in the photo. Grease a skillet with a wedge of butter and place the rolls on top, frying to taste.

If you want to use cottage cheese as an additional dessert, prepare a special cottage cheese cream in which ready-made pancakes can be dipped. Pass the curd through a sieve, add 4 tablespoons of sugar and 2 egg yolks. Soak a cup of gelatin in a glass of cold water. Boil 0,5 liters of milk and add the swollen gelatin to it, mix thoroughly and then cool. Mix with curd and whisk well with a blender. You can add cocoa and vanillin to taste and serve with pancakes.
