Okroshka on kefir: a real summer taste. Video
On hot summer days, it is better to diversify the menu with light dishes – such as okroshka on kefir. This cold soup is great for satisfying hunger and thirst. It is not very high in calories, so you can use it without fear for your figure. In addition, the advantages of okroshka include the speed of preparation and the availability of products: they are not very expensive and are sold in ordinary grocery stores.
Okroshka on kefir with sausage: recipe
According to the classic recipe, okroshka is prepared with kvass. For a change, try another version of this summer dish – kefir okroshka.
To prepare okroshka on kefir with boiled sausage, you will need the following ingredients: – green onions – 20 g; – fresh cucumbers – 1 large or 2 small; – potatoes – 4 pieces; – boiled sausage – 100 g; – eggs – 3 pieces; – parsley – 15 g; – table vinegar – one tablespoon; – medium fat kefir – 200 ml; – chilled boiled water – half a glass; – freshly ground black pepper – optional; – table salt – to taste.
Products for okroshka can be cut very finely or somewhat coarser. Table vinegar can be substituted for lemon juice
Bring water to a boil, then refrigerate. Meanwhile, boil the jacket potatoes and eggs in separate pans. Cut the green onions into rings and the cucumbers and sausage into cubes. When the potatoes and eggs are cooked, cool them, then peel and cut into small pieces. Chop the parsley finely. Transfer all these ingredients to a saucepan, cover them with kefir and then chilled water. Add vinegar, salt and pepper. Okroshka should be infused for some time, then its taste will become more intense. To do this, place the cooked summer soup in the refrigerator for a short time.
Okroshka recipe with mineral water and kefir
To prepare okroshka with mineral water and kefir, you will need: – boiled potatoes – 3 pieces; – kefir (preferably medium fat) – 500 ml; – medium carbonated mineral water – 1 liter; – cucumber – one piece; – boiled sausage (“Doctor’s”) – 100 g; – green onions – 20 g; – hard-boiled eggs – 2 pieces; – sour cream – 1,5 cups; – radish – 60 g; – lemon – 1/2 piece; – dill or parsley, table salt – to taste.
Chop green onions, parsley or dill finely. Stir the herbs by adding a little salt and drizzling with lemon juice. Peel and cut the boiled potatoes and eggs into small cubes. Treat radishes in the same way. Or chop the cucumber into strips, or grate. Cut the sausage into small cubes. Now stir kefir and sour cream in one liter of mineral water, while they should completely dissolve. Pour this mixture over the ingredients and add a little salt to your taste.
Recipe okroshka on kefir with yolks
This recipe may be unfamiliar to you. Try to cook okroshka on kefir with egg yolks whipped with vegetable oil. It doesn’t sound very appetizing, but the dish turns out to be unusual and tasty. It will take about 40 minutes to cook.
For 4 servings of okroshka on kefir with yolks, you will need the following ingredients: – fresh garlic – 3-4 cloves; – fat kefir – 1/2 liter; – fresh cucumber – one piece; – raw egg yolks – 2 pieces; – dill – one bunch; – parsley – 2 bunches; – ground hazelnuts – 4 tablespoons; – freshly squeezed lemon juice – 1-2 tablespoons; – vegetable oil – 2 tablespoons; – melted butter – 1 tablespoon; – salt, black pepper – to taste.
After peeling the cloves of garlic, chop them and crush them into a gruel. Add some salt. After washing the parsley and dill, chop them finely. Cut the well-washed cucumber in half and remove the seeds with a spoon, then cut the flesh into small cubes.
If you don’t have fresh garlic, you can replace it with dried granular product.
Add yolks, butter and vegetable oil to kefir, then beat these ingredients into a foam. Add garlic gruel, chopped dill and parsley, cucumber cubes and ground nuts. Season okroshka with lemon juice, pepper and salt. Chill summer soup in the refrigerator or add a few ice cubes before serving. Decorate the okroshka with dill sprigs.
To cook okroshka on whey, you will need the following products: – potatoes boiled in their skins – 4–5 pieces; – hard-boiled eggs – 4-5 pieces; – boiled sausage – 300 g; – fresh cucumbers of medium size – 4 pieces; – thick sour cream or homemade mayonnaise – 1/2 liter; – whey (better than homemade) – 3 liters; – green onions, dill, salt, citric acid – to taste.
You can not add citric acid to okroshka on whey, since due to whey the soup will be quite sour anyway. It all depends on your preferences.
Finely chop potatoes, eggs, sausage, cucumbers and herbs, mix with sour cream or mayonnaise. Add whey. If you like a thinner soup, add more whey and vice versa. Salt, add citric acid if desired – and your okroshka is ready.
