It is easy and simple to choose beautiful and correct New Year’s snacks for the festive menu. With just a few recipes, you can transform traditional New Years snacks into culinary delights.
New Year’s fish snacks often delight guests looking for their figure, so a salmon roll with peas can become the number one hit of your holiday table. To prepare it, you will need: – two salmon fillets, 450 grams each, – 100 ml of milk, – 300 grams of fresh frozen green peas, – 350 grams of flounder fillet, – a pinch of nutmeg, – a couple of pieces of white bread, – olive oil, – a few sprigs of parsley, – carrots, – 1 egg white.
Peel and boil the carrots, cut them into small cubes. Cook the peas for six minutes. Remove the crust from the bread and soften it in milk, then add nutmeg, salt and pepper to taste, boiled peas and finely chopped parsley to it. Grind the flounder fillet in a blender, mix it with the bread mixture and refrigerate. Take the first salmon fillet and cut a three centimeters wide piece from the thickened part. On the second fillet, make a longitudinal cut to the right and left.
The incision should not reach the edge of one and a half centimeters. As a result, you should have three pieces from which you will make rolls
Place the filling in the center of the largest piece, leaving five centimeters of free space on each side. Place a salmon block on top of the filling. Then lay out the second part of the filling and cover it with another small piece of salmon. Secure the free edges of the roll with wooden toothpicks, wrap it in foil and bake in the oven for half an hour. After cool, remove the foil and cut the roll beautifully. A new snack for the New Year is ready.
Hot appetizer with chicken and cheese
It is impossible to imagine a festive table without a hot snack for the New Year. To cook chicken with cheese, you will need: – 500 grams of boiled chicken fillet, – 150 ml of heavy cream, – 2 yolks, – 4 eggs, – 1 large green apple, – 3 tablespoons of flour, – 2 tablespoons of butter.
Cut the fillets into slices. Melt the butter in a skillet over medium heat, add flour and 2/3 cup water. Mix until smooth. Mix the yolks and cream separately, then add the flour mixture, return everything to low heat and cook for three minutes until the mixture thickens.
Boil eggs, chop finely. Cut the green apple into small cubes and stir in the chicken and eggs. Put everything in portioned heat-resistant tins, cover with thickened sauce and bake for twenty minutes. When ready, serve these simple snacks hot.
How to decorate chicken and cheese snacks? Top with sprigs of fresh herbs or sprinkle each serving with finely chopped basil
A hearty snack for the New Year is pork escalope. Prepare: – 500 grams of pork (preferably from the kidney), – 150 grams of fresh mushrooms, – 2 tablespoons of pork fat, – 30 grams of tomato sauce, – herbs, – salt and pepper to taste.
Slice the pork across the grain into wide chunks, beat, season with salt and pepper to taste, then fry in pork fat on both sides until tender.
Readiness is determined by the formation of a brown crust.
Transfer the fried pork to a saucepan, and add a little water or broth, tomato sauce to the pan and boil for five minutes. After that, the appetizer is ready. Serving the dish on the table, put boiled and sliced champignons on the pork, put fried potatoes, tomato slices next to it and sprinkle the dish with finely chopped herbs.
Chicken liver in wine sauce
To prepare a New Year’s snack from chicken liver in wine, you will need: – 300 grams of liver, – 100 grams of mushrooms, – 200 grams of red wine, – 3 tablespoons of ghee, – herbs, – salt and pepper to taste.
Rinse the chicken liver, carefully remove the bile, scald with boiling water, salt, pepper and fry. Add mushrooms to the fried liver and continue to fry for about 5 minutes. Then pour the wine into the pan and bring the dish to a boil. Pour the cooked liver with tomato or sour cream sauce, boil for a few more minutes and serve with fried potatoes or crumbly rice, sprinkling with finely chopped herbs.
Stewed squid with white wine
Another new appetizer to your New Year’s table is squid with white wine. To prepare it, take: – 1,5 kg of squid, – 10 tomatoes, – 100 grams of dry white wine, – 150 grams of vegetable oil, – 2 cloves of garlic, – a tablespoon of chopped parsley, – pepper and salt to taste.
Peel the squid, rinse thoroughly and cut into pieces. Fry them in vegetable oil, add white wine and simmer for a few minutes, then add mashed tomato paste, chopped parsley, pepper and salt to the squid.
To prevent the squid from getting tough, add them to the rest of the ingredients 5 minutes before the end of cooking and simmer under a lid over low heat
After stewing the squid until cooked, season them with grated garlic and serve with rice or pasta.
