Rene Redzepi and Klaus Mayer are considered the pioneers of the movement to create New Scandinavian cuisine, who in 2003, on the menu of the now legendary Copenhagen restaurant Noma, rediscovered the tastes of such familiar products as cabbage, rye, wild garlic … Rene and Klaus united farmers and chefs around themselves and sympathizers. Over time, the movement was picked up by many chefs across Denmark.
Inspired by the experience of the Noma restaurant, scientists from the University of Copenhagen have developed the New Nordic Diet based on Danish cuisine, which, in addition to weight loss, has been shown to promote health in general, according to studies conducted among adults and children.
