Diet chicken cutlets with vegetables and herbs

Ingredients: – 500 g chicken breast fillet; – 1 medium zucchini; – 1 small jar of canned corn (150 g); – 1 chicken egg; – 20 g parsley; – salt; – ground black pepper; – olive oil.

Spices play a large role in dietary cuisine. They help break down fats, speed up metabolism, improve tone and immunity. Just a pinch of seasoning in a meat dish will help you lose weight faster and improve digestion.

Turn the breast fillet through a meat grinder. Peel the zucchini (if it is young, this is not necessary) and grate on a fine grater or chop in a blender. Combine the minced meat and grated vegetable, add the egg, finely chopped parsley and mix well. Drain the liquid from the corn and chop it with a press or in a blender, also put in a mass for cutlets. Season everything with salt and pepper to your liking, use spices if desired, such as curry, rosemary or oregano.

Form patties and quickly sauté them in a little olive oil over medium heat until white. Preheat oven to 200 degrees at the same time. Transfer the semi-finished chicken meatballs to an ovenproof dish, cover with a sheet of foil, wrapping the edges hermetically, and send to bake for 15-20 minutes. Braising in foil will give the food an even more delicate and light taste. If you need a crispy crust, remove the foil 5 minutes before cooking.

Tender chicken cutlets with breaded mushrooms

Ingredients: – 600 g thigh fillet; – 250 g of mushrooms; – 1 chicken egg; – 1 medium onion; – 2 slices of white bread; – 0,5 tbsp. milk; – 30 g butter; – 100 g bread crumbs; – salt; – vegetable oil.

Boil the mushrooms in salted water for 8 minutes, chop coarsely and fry in vegetable oil. After 3-4 minutes of frying, add the chopped onion to them and cook for another 1-2 minutes. Pass the chicken fillet and mushrooms and onions cooled to room temperature twice through a meat grinder. Soak white bread in milk and turn it through a meat grinder too. Melt the butter and put it in the minced meat, break the egg there, salt and mix thoroughly.

Divide the cutlet mass into small equal parts, form the meatballs and roll them in breadcrumbs. If the breading layer does not seem thick enough, dip the patties in the egg and cover again with breadcrumbs. Fry them over high heat for a minute on both sides, then reduce heat to medium and cover the pan with a lid. Cook the dish for another 5-10 minutes. These cutlets literally ask for a fat sauce, and in this case it is not quite an easy meal. It can be served with a thick sour cream or mushroom gravy garnished with mashed potatoes, green peas, or stewed vegetables.

Minced chicken cutlets with cheese, egg and herbs

Ingredients: – 800 g breast fillet; – 5 chicken eggs; – 200 g of cheese; – 50 g of greens (dill, parsley, green onions); – 100 g bread crumbs; – salt; – ground black pepper; – vegetable oil.

For this recipe, it is better to take a hard salty cheese, for example, Russian, Gouda, Tilsiter, Lambert, Poshekhonsky, etc. It will not only enrich the taste of the dish, but also act as a binding element for crumbly greens and eggs

Grind the chicken in a blender or meat grinder, add 2 eggs, add salt and pepper to taste and stir. This is the basis for future cutlets, now start preparing the filling. To do this, boil 3 eggs, cool, peel and finely chop or grind with a fork. Chop the herbs and grate the cheese on a fine grater. Take some minced chicken and place it on a flatbread saucer. Place the cheese and egg filling in the center, cover with a layer of minced meat on top and give a neat shape.

The cutlets turned out to be quite large. Dip them in breadcrumbs and send them to a hot oil in a frying pan. Reduce heat to medium, cover with lid and cook patties for 3-5 minutes on each side. They must be served and eaten hot, because melted cheese makes them juicy. A fresh vegetable salad or crumbly rice is well suited for a side dish.
