Ingredients: – 6 salted herring fillets; – 1,5 cups of water; – 300 ml of wine vinegar; – 120 g brown sugar; – 1 teaspoon of salt; – 2 onions; – 1 bunch of fresh dill; – 1 hour each .spoons of mustard, coriander and allspice; – 3 pcs. cloves; – ½ teaspoon red pepper.
Soak herring fillets in water for 12 hours. Then strain the water and cut the fish into 2 cm wide pieces. In a separate saucepan, combine the water, vinegar and sugar. Bring everything to a boil.
Put the pieces of fish in a pre-sterilized jar, sprinkling each layer with onions, dill and seasonings. Pour over the cooked marinade, which should completely cover the fish. Close the jar with a lid and refrigerate. After 3-4 days, the fish can be served.
Salmon with gin and juniper berries
Ingredients: – 500 g of fresh salmon; – 1 tbsp. a spoonful of salt; – 0,5 tsp of white ground pepper; – 30 ml of gin; – 1 tbsp. a spoonful of juniper berries.
Wash the salmon, cut into small pieces and dry. Chop juniper berries and mix with pepper and salt. Rub the pieces of fish with this spicy mixture.
Place the salmon in a deep glass dish and cover with gin. Cover and refrigerate for 6-10 hours. After the allotted time, the marinated fish will be ready.
