Chicken meat is ideal for marinades, which, depending on the composition, give it a completely different aroma and taste. You can see this for yourself if you cook chicken in grape marinade or in soy sauce with honey and lemon.
Chicken legs in grape marinade
You will need: – 1 kg of chicken drumsticks; – 2 tbsp. grape juice; – 5 pieces. carnations; – 10 peas of allspice; – 5 black peppercorns; – 3-5 pcs. barberry; – half a teaspoon of citric acid; – 1 tbsp. salt; – 0,5 tbsp. Sahara.
Defrost chicken drumsticks and wash, if there is keratinized skin on the joint, remove it. Prepare the marinade. To do this, squeeze the juice from the grapes (it is better to take a sweet and sour variety). Put all the spices in the marinade, dissolve citric acid, salt and sugar. Pour the mixture over the chicken drumsticks, press down with a plate so that the poultry is completely covered with the marinade, and wait 3-4 hours. Better to put the container in the refrigerator.
If the grapes are very sour, reduce the amount of citric acid. You can take lemon juice instead of citric acid
Grill the marinated chicken drumsticks until crisp. Check the readiness of the meat with a toothpick, if a clear juice is released, the dish is ready. This simple marinating method works well for barbecue. They turn out to be low-fat, but at the same time fragrant, juicy and appetizing.
Chicken in soy-honey marinade
You will need: – 1 chicken; – 10 tbsp. soy sauce; – 3 tbsp. honey; – ½ lemon – onion; – 1 tbsp. flour; – 4-5 cloves of garlic; – spices to taste (ginger, curry, pepper mix). – salt.
Wash the chicken, cut into pieces. Prepare the marinade. To do this, put the spices to taste in the soy sauce, squeeze the juice from half a lemon, chopped onions into rings. Crush the garlic and add to the marinade. Melt the honey until liquid and pour into the mixture. Season with salt to taste. Place the chicken in the marinade, stir, press with a plate and refrigerate for 3-4 hours.
If you cook chicken in the oven, add a spoonful of flour to the marinade, it will taste better. You don’t need to do this for grilling or barbecuing, the flour will burn quickly
Remove the marinated chicken from the refrigerator, transfer the pieces to a greased baking sheet, pour in the remaining soy marinade and bake at 200 ° C until tender.
In this way, you can marinate chicken for a picnic. You need to fry it on the grill on a wire rack until it is lightly burnt on both sides.
You can cook whole chicken. To do this, coat it with marinade inside and outside, place it in a plastic bag, pour the rest of the mixture into it, tie it and put it in the refrigerator in this form. Bake the marinated chicken in the oven until tender, periodically pouring over the juice that comes out.
