Ghee is refined milk fat. It is made from butter, removing excess water, milk proteins and milk sugar from it. This oil can be stored for months and withstand high temperatures, so it is great for frying.
To make ghee at home:
– Take high-quality butter with a fat content of at least 80%;
– Put the butter in a saucepan with a thick bottom and put on low heat;
– During heating, white flakes will begin to appear on the surface, they must be carefully removed;
– When the oil becomes clear and amber, it is ready;
– Strain hot oil through a fine strainer and pour it into a glass dish;
– From 500 gr. butter will be about 300 gr. melted;
– Ghee is stored for about 9 months at room temperature and about 15 months in the refrigerator.
