How to identify false mushrooms when cooking

Reading time – 3 minutes.

The whole difficulty of recognizing real non-dangerous mushrooms lies in their huge species diversity. Even an experienced mushroom picker can hardly distinguish between families, relying on clear signs of external similarity. It even happens that false specimens can grow in the same stump with fresh, tasty mushrooms that do not pose any danger.

The most reliable way to identify false mushrooms is to do it before boiling.… What you need to pay attention to first of all is the hat. A bright unnatural color should alert you, and the uneven color of the plates should stop altogether. If there is no characteristic ring on a smooth leg, be sure that this is definitely an impostor in front of you. Real mushrooms have a specific oily mushroom aroma, which is enhanced by any heat treatment. Poisonous spy mushrooms give off dampness, mold, tree bark and musty grass. After the verification procedure, edible mushrooms can be boiled.

There are 2 rumors – that false mushrooms change color during cooking and that the onion, if there are false mushrooms in the pan, will darken. These rumors are false. The onion can also darken in a saucepan with edible mushrooms, depending on the place of collection and the type of mushrooms. The same applies to color changes – edible mushrooms also darken, this is a normal process.
