How to cook turkey: 5 easy recipes

Summer is the time for open verandas, vacations and light meals. Simple recipes with fresh ingredients and vibrant flavor combinations, such as meat with fruit or berry sauces, are trending. Turkey is becoming more and more popular, appearing on restaurant menus, on store shelves, and on Instagram accounts of food bloggers. And for good reason: this is a versatile product that harmoniously combines dietary properties and an unusual taste at the junction of red and white meat. First, let’s recall the beneficial qualities of turkey:

  • Firstly, turkey meat is hypoallergenic and therefore equally suitable for feeding children and adults.
  • Secondly, turkey meat contains many vitamins and minerals. For example, phosphorus (yes, fish has a competitor!), Calcium, potassium, selenium, iron and zinc, as well as a number of B vitamins, with a deficiency of which we become nervous and irritable, immunity decreases, the heart and muscles suffer, the condition of the skin, hair and nails deteriorates.
  • Third, turkey meat contains tryptophan, an amino acid that we only get from food. It is from tryptophan that the so-called “happiness hormone”, serotonin, is synthesized in the body.
  • Fourth, turkey is an excellent source of protein as it contains 20 g of protein but only 2 g of fat.

What factors to consider when buying turkey meat? It should be a proven brand that uses modern technologies to preserve the properties of dietary meat and natural taste without preservatives. It is better to choose a full-cycle manufacturer; in such a production, product quality standards are usually set and a system for their observance is established.

Homemade turkey sausage

Making turkey sausage at home is pretty easy using whatever spices are available. Homemade sausage is a natural and low-calorie snack that even children can eat without harm.

Servings Per Container: 6. Cooking Time: 1 hour.

 

Ingredients:

  • Breast fillet – 700 gr.
  • Egg white – 3 pcs.
  • Cream 20% – 300 ml.
  • Nutmeg – pinch
  • Garlic – 3-4 teeth.
  • Salt – to taste
  • Pepper to taste

How to cook:

 
  1. Cut the fillet into small pieces, peel and chop the garlic in a blender until creamy.
  2. Add protein, pepper, salt and nutmeg, mix well. Then pour in cold cream and beat until smooth. For a more traditional pink color, you can add 50 ml of beetroot juice. Shake the minced meat container several times to remove air bubbles.
  3. Put about a third of the mass on cling film, wrap it in a thick sausage and tie the edges. This should make 3 sausages.
  4. In a large saucepan, bring water to a boil over low heat. Put sausages in water, cover and cook for 45 minutes.
  5. Remove the sausages from the water, remove the cling film and refrigerate overnight.

Thigh skewers in citrus marinade

A sweet citrus sauce with a subtle tarragon aroma is the best match for tender and juicy thigh kebabs.

Ingredients:

 
  • Thigh fillet – 900 g.
  • Orange – 1 pcs.
  • Lime – 2 pcs.
  • Lemon – 1 pcs.
  • Tarragon (tarragon) – 1 bunch
  • Sugar – 2 st. l.
  • Salt – to taste
  • Pepper to taste

How to cook:

  1. Cut the thigh fillet into fairly large pieces. Peel the orange, lemon and lime, halve and remove the seeds.
  2. Grind peeled citrus fruits, salt, pepper and tarragon in a blender. Pour over the thigh pieces with the resulting mixture and refrigerate for 30 minutes.
  3. Form kebabs, fry until tender in any way possible.
  4. Pour the remaining marinade into a saucepan, bring to a boil, add sugar and cool.
  5. Serve skewers with pita bread and citrus sauce.

Shin steaks in ginger marinade

Ginger-marinated steaks are ideal when you want to prepare a simple dish that is not weighted down by a long list of ingredients, but still retains a deep, multifaceted flavor.

 

Servings: 4. Cooking time: 1 hour 30 minutes (of which 30 minutes should be spent in the refrigerator and 45 minutes in the oven).

Ingredients:

  • Shin steaks – 4 pcs.
  • Ginger – 2 cm long piece of root (grate)
  • Soy sauce – 50 ml.
  • Lemon – 0,5 pcs.
  • Sugar – 1 st. l.
  • Worcester sauce –1 tbsp. l. (sold in large supermarkets, look in the “Exotic Cuisine” sections)
 

How to cook:

  1. In a small bowl, combine the grated ginger, soy sauce, sugar, Worcestershire sauce, and the juice of half a lemon.
  2. Pour the drumstick steaks with the resulting mixture and put them in the refrigerator for half an hour.
  3. Fry the drumsticks on a hot grill (a grill pan will work as well) for 2 minutes on each side until golden brown streaks appear.
  4. Then transfer to a baking sheet covered with foil and send to an oven preheated to 180 degrees for 45 minutes.
  5. Serve with fresh lettuce and tomatoes drizzled with balsamic vinegar.

Liver pancakes with raspberry sauce

Fritters are arguably one of the most common liver dishes, but try to reinvent this recipe with a delicious raspberry sauce. By the way, turkey liver is distinguished by the absence of bitterness inherent in the liver of other species.

Servings Per Container: 4. Cooking Time: 45 minutes.

Ingredients:

For pancakes

  • Liver – 500 gr.
  • Luk – 1 No.
  • Garlic – 2 teeth
  • Egg – 2 pcs.
  • Sour cream – 2 Art. l
  • Flour – 3 Art. l
  • Vegetable oil – 4 Art. l
  • Pepper to taste
  • Salt – to taste

For sauce

  • Raspberries – 200 gr.
  • Sugar – 50 gr.
  • White wine vinegar – 50 ml.
  • Dry white wine – 50 ml.
  • Fresh basil – 3 sprigs
  • Carnation – 3 pcs.
  • Corn starch – 2 tbsp. l.

How to cook:

  1. Grind raspberries in a blender and grind through a sieve to get rid of the seeds (if you like their texture, you can skip the item with a sieve).
  2. Transfer to a saucepan or small saucepan, add sugar and cloves, put on low heat.
  3. As soon as bubbles appear, add wine, vinegar, basil sprigs and cook for 10 minutes.
  4. Then remove the basil and cloves and add the starch diluted in cold water, cook for another 5 minutes until thickened. Cool the finished sauce to room temperature.
  5. Scroll the liver in a meat grinder or chop in a blender, add finely chopped onions, eggs, sour cream, flour, salt and pepper. Mix everything well and let stand for 10-15 minutes.
  6. Fry the pancakes in hot oil for 2-3 minutes on each side until golden brown and serve with raspberry sauce.

Lazy Wing Stew

The oven is the main assistant of every culinary specialist: despite the long cooking time, you can safely do other things, while the dishes are being prepared without your participation.

Servings Per Container: 4. Cooking Time: The dish should sit in the oven for 1 hour 10 minutes.

Ingredients:

  • Wings – 1,5 kg.
  • Potatoes – 3 pcs.
  • Eggplant – 1 pcs.
  • Bulgarian pepper – 1 pc.
  • Tomato – 3 pcs.
  • Luk – 1 No.
  • Garlic (chopped) – 4 teeth.
  • Adjika – 1 tsp
  • Parsley – 1 bunch (small)
  • Dill – 1 bunch (small)

How to cook:

  1. Chop the turkey wings into small pieces with a hatchet and spread with adjika and chopped garlic.
  2. Peel the vegetables and cut into large pieces.
  3. Put chopped vegetables on the bottom of a baking dish and put pieces of wings on top, cover with foil and put in an oven preheated to 180 degrees for 1 hour.
  4. Then remove the foil and bake for another 10 minutes. Finely chop the greens and sprinkle with it on the finished dish.
