How to cook classic and unconventional herring under a fur coat

Winter salad, familiar and cozy, like trips to grandma on the weekend, herring under a fur coat is still a frequent guest on our tables, and not only on holidays. The salad is convenient because vegetables can be cooked in advance and put in the refrigerator, and the herring is the right place there. From the simplest and most affordable products, a flaky miracle is obtained – beautiful, juicy and tasty.

Initially, the dish with herring and beets appeared at the beginning of the XNUMXth century in Russia as a dense snack for vodka in order to avoid the rapid intoxication of customers. In times of total shortage, Herring under a fur coat migrated to the New Year and festive table, decorating with itself a variety of homemade preparations, which were the main food “both in the feast and in the world.” Today, when any delights and exotic products have ceased to amaze us, more and more often we want to pamper loved ones with friends and such a dear salad.

 

Of course, the choice of prepared herring fillets in stores is huge, but for a salad, a barrel, fatty and fleshy herring is best suited, which you yourself must peel and free from bones. In different recipes, herring is cut in different ways, some prefer long thin strips, some prefer small cubes, and some prefer large pieces of herring. The choice is entirely up to the hostess, who takes into account the tastes of consumers.

The preparation of products for all recipes is the same – boil and peel the vegetables, cut the onions into thin half rings, pour over with boiling water and cool, peel and cut the herring into medium pieces, if eggs are used, boil and peel them too. Recipes are for medium sized vegetables. Vegetables for herring under a fur coat need to be boiled without peeling, an alternative way is to cook in the microwave, and the beets can be baked by washing and wrapping each one in foil. Usually they take about the same amount of carrots and beets, a little more potatoes. Traditionally, vegetables are grated on a coarse grater, but it is quite acceptable to chop them finely, like on a vinaigrette. Slicing onions is also an individual matter, and small cubes and thin half rings are welcome.

Herring under a fur coat – a classic

Ingredients:

  • Herring – 2 pcs.
  • Beets – 2 pcs.
  • Carrots – 2 pieces.
  • Potatoes – 4 pcs.
  • Onions – 1 pc.
  • Mayonnaise – 300-400 gr.

Chop the onion and pour boiling water for a couple of minutes, put it on a sieve, rinse with cold water. On a flat dish or plate, lay out in an even layer half the onion, half the chopped herring and half the potatoes, coat well with mayonnaise, but not in a thick layer. Next, distribute half of the chopped carrots, mayonnaise and repeat the layers from the very beginning, not forgetting to coat with mayonnaise. Put the beets in the last layer, generously coat with mayonnaise and send to the refrigerator for several hours.

Traditional herring under a fur coat

Ingredients:

 
  • Atlantic herring – 500 gr.
  • Boiled beets – 4-5 pcs.
  • Boiled potatoes – 2-3 pcs.
  • Boiled carrots – 1-2 pcs.
  • Onions – 1-2 pcs.
  • Mayonnaise to taste.

The salad is prepared similarly to the classic recipe, grated carrots are laid out on a layer of potatoes and smeared with mayonnaise, then beets. For variety, try a fish salad garnished with mayonnaise and thin strips of vegetables.

Herring under a fur coat is classic, but with eggs and apples

Ingredients:

  • Herring fillet – 400 gr.
  • Beets – 3 pcs.
  • Carrots – 2 pieces.
  • Potatoes – 3 pcs.
  • Egg – 4 pcs.
  • Onions – 1 pc.
  • Apple – 2 pcs.
  • Apple cider vinegar – 10 gr.
  • Lemon juice – 5 gr.
  • Mayonnaise – 300-400 gr.

Chop the onion and marinate in a mixture of vinegar and lemon juice for 10 minutes. Boil vegetables and eggs, cool and peel. Put the herring in the bottom layer, onion on it (drain the marinade) and potatoes, diced or grated on a coarse grater. Lubricate with mayonnaise. Further in order: carrots, mayonnaise, eggs, mayonnaise, grated apple, mayonnaise, beets, mayonnaise. Send the fur coat to the cold. Garnish the top of the salad with herbs or grated yolk if desired.

 

Classic herring under a fur coat, but without carrots

Ingredients:

  • Herring – 1 pcs.
  • Beets – 2 pcs.
  • Potatoes – 2 pcs.
  • Onions – 1 pc.
  • Mayonnaise – 300 gr.

Boil vegetables in a uniform, cool, cut onion into thin half rings, pour boiling water over. Cut herring into long thin cubes, put on a flat dish. Drain the onion, distribute it over the herring, grate the potatoes on top. Spread generously with mayonnaise, grate the beets, coat the whole salad with mayonnaise and refrigerate overnight. Before serving, apply the pattern with mayonnaise, decorate with herbs.

Despite the stable traditions in cooking herring under a fur coat, new ingredients are constantly added to the recipes – cheese, pear, quail eggs, green onions, and the herring is replaced with smoked fish or squid. Salad is often served in the form of a roll or portioned “fur coats”, all this is permissible, the main thing is that it is tasty and you want more.

 

A salad unique in its versatility – Herring under a fur coat – is equally good for a family dinner on Wednesday and a Sunday gala dinner. Boiled vegetables available all year round and barreled herring are perhaps the whole secret of cooking your favorite dish. Of course, when the simplest food is easily transformed into newfangled dishes, transforming into rolls and even rolls, this adds popularity and guarantees unflagging interest.

Herring roll under a fur coat

Ingredients:

  • Atlantic herring – 400 gr.
  • Boiled beets – 4 pcs.
  • Boiled carrots – 2 pcs.
  • Hard-boiled eggs – 2-3 pcs.
  • Onions – 1 pc.
  • Greens
  • Mayonnaise to taste.

Serving your favorite salad in an unusual way will take a little longer, but the results will be worth it. Spread a little mayonnaise in the form of a rectangle on a cling film and spread the beets grated on a coarse grater in an even layer, then – mayonnaise, grated carrots, mayonnaise, chopped greens, finely chopped (grated) eggs, pieces of herring and onions. Carefully roll the food into a tight roll, but do not overdo it, so that porridge does not turn out, but the texture of the dish is visible. Send the roll to the refrigerator for several hours, serve, cut it across into pieces 2-2,5 cm thick.

 

Herring under a fur coat in the form of a jelly

Ingredients:

  • Atlantic herring – 400 gr.
  • Boiled beets – 4-5 pcs.
  • Boiled potatoes – 2-3 pcs.
  • Boiled carrots – 2 pcs.
  • Boiled eggs – 3 pcs.
  • Onions – 1-2 pcs.
  • Greens optional
  • Food gelatin – 20 gr.
  • Mayonnaise to taste.

The originality of this type of salad is in the consistency of the dish, which will be elastic, all the components are a single whole. The secret of the recipe is to mix mayonnaise with gelatin. To do this, first dilute the gelatin with water (according to the instructions on the gelatin package), leave to swell, heat, but do not bring to a boil, cool and mix with mayonnaise. Next, cut all prepared products into small cubes (rub on a coarse grater or a grater for Korean carrots, there are many options) and mix each type with gelatinous mayonnaise, even herring. It is necessary to lay out the salad in layers in a shape (rectangular, oval, with a hole for a cake or small portioned tins – the flight of imagination is not limited), paying attention to the fact that the first laid layer will be on top when serving. Send the completed form to the refrigerator until it solidifies.

Herring under a fur coat in the form of rolls

Ingredients:

 
  • Herring fillet – 400 gr.
  • Boiled beets – 4 pcs.
  • Boiled potatoes – 3 pcs.
  • Boiled carrots – 1 pcs.
  • Onions – 1-2 pcs.
  • Mayonnaise to taste.

For the convenience of cooking, you need to use cling film, on which to lay out uncut herring fillets so that they remain intact during the process of cutting the finished dish (see photo). Then lay the products in layers – onions, mayonnaise, diced potatoes, mayonnaise, carrots, mayonnaise, beets, a little mayonnaise. Gently roll the salad into a roll, gradually removing the film, put in the refrigerator for 2-3 hours, cut into portions before serving.

Herring under a fur coat is a cozy and homemade salad, warm and winter, when you want solid snacks, but salads from fresh vegetables do not warm you up. You can design a salad in different ways, the main thing is to cook it with love.
