How to choose fresh fish

If you have the opportunity to buy live fish – use it, this is a 100% guarantee of its freshness. But in order to buy a quality chilled fish, you need to know just a few secrets.

  1. Pay attention to the appearance of the fish, the scales should be shiny and clean.
  2. Smell the fish, the smell should be pleasant and not fishy at all. If you smell a strong fishy smell, this fish is not fresh.
  3. Examine the fish’s eyes; they should be bulging and transparent. If the fish’s eyes become cloudy or have sunk into the eye sockets, this fish is bad.
  4. Look at the gills of the fish; they should be bright in color. If the gills begin to acquire a gray tint and a pungent smell emanates from them, do not take this fish.
  5. Press your finger on the fish carcass, fresh fish has elastic meat, after pressing, the fossa will immediately straighten. But if the hole remains, this fish is unusable.
  6. We often see gutted carcasses or fish steaks on the shelves. In this case, it is worth sniffing the fish, checking the elasticity with your finger, and also paying attention to the rib bones, if they have moved away from the abdomen – the fish is of poor quality.
  7. In the case of fillets, we sniff and check for elasticity. Pay attention to the color, it should be even and without yellowness.
