Homemade cakes: dough for rolls, pies, cakes. Video

Preparation of the dough

It depends on the dough how high-quality the products made from it will be, therefore, when kneading, you should follow some rules. For example, the liquid in which the yeast is bred should be warm, but not cold or hot. Otherwise, the dough will not rise.

The shortbread butter should be chilled but soft. You need to knead shortbread dough with cold hands so that the oil does not heat up. The finished dough needs to be kept in the refrigerator for half an hour and only then proceed to the formation of products.

The biscuit dough should be baked immediately while it is filled with air bubbles. During the preparation of the biscuit, the oven must not be opened, as the dough will fall off and lose its airiness.

To make the yeast dough softer, you can add potatoes grated on a fine grater to it.

Sweet pies and buns made from yeast dough will be more flavorful if you put a pinch of nutmeg in the dough.

While kneading the dough, pour in the liquid in a thin stream, stirring constantly and a little bit. Then the dough will be smooth and without lumps.

Baking Secrets

The cake will be bright yellow if you grind the yolks for the dough with a small pinch of salt and put them in the refrigerator for several hours. For pies and buns to turn out fluffy and ruddy, before putting them in the oven, hold the products for 20 minutes at room temperature. Then brush the surface evenly with the beaten egg white.

Before making the pie, the filling must be cooled, otherwise the dough inside the product may not be completely baked. If products fried in oil are used as the filling, before using them, they must be thrown onto a sieve so that the oil glass. Otherwise, the cake will not bake in the center.
