For dessert, choose sour apples, such as Antonovka. They cook faster and have a rich aroma. You can add vanilla, cinnamon or honey to the dough to add new flavors to the dish.
Do not add too much sugar to the pancakes, as they may burn during baking. For sweets, pour honey, jam, or caramel syrup over the prepared pancakes. The baking soda should be quenched with lemon juice or vinegar so that the baked goods do not have a characteristic aftertaste.
Apple pancakes take a little longer to cook. So that they are baked and not burnt, first fry the products at a high temperature, and then reduce the heat of the stove and continue baking the products until cooked.
Fritters with apple circles
The pancakes baked according to this recipe are very tender on the inside. The soft core will contrast nicely with the crispy crust.
You will need: – 8 medium sized apples; – 0,5 cups of milk; – 3 eggs; – 1 teaspoon dry yeast; – icing sugar; – 0,5 cups of wheat flour; – 0,25 cups of sugar; – 1 teaspoon of butter; – vegetable oil for frying.
Such pancakes can be prepared not only with apples, but also with pears.
Dissolve the yeast in a little warm water. Melt the butter, beat the eggs. Sift flour into a bowl, add eggs, butter, milk, yeast, half a serving of sugar and a tablespoon of powdered sugar. Knead smooth dough and let it rest for a quarter of an hour.
Peel the apples, remove the core, and cut the fruits themselves into circles about 1 cm thick. In a plate, mix the powdered sugar and the remaining sugar, roll the apple circles in the mixture. Then dip them in the dough and place in a frying pan with heated vegetable oil. Fry the pancakes until golden brown.
Place the finished products on a dish covered with a paper towel and drain off the excess oil. Then sprinkle the pancakes with powdered sugar and serve.
Fritters with grated apples
You will need: – 0,75 cups of kefir; – 1 teaspoon of soda; – 1 tablespoon of lemon juice; – 3 apples; – 1,5 cups of flour; – 1 egg; – 1 teaspoon of cinnamon powder; – 3 tablespoons of sugar ; – salt; – vegetable oil for frying.
If you don’t like cinnamon, eliminate it from the recipe.
Peel the apples and chop very finely or grate them on a coarse grater. Sprinkle them with lemon juice. Pour kefir into a deep bowl, add a slightly beaten egg, salt, sugar and soda, slaked with vinegar. Pour the sifted flour in portions, then add the grated apples to the dough.
Heat vegetable oil in a skillet. Spoon the dough out and fry the pancakes on both sides. Bring them to readiness and transfer to preheated plates. Serve the apple pancakes with sour cream, honey, or jam.
