To make a French apple pie, you will need the following ingredients: – 15 ml (1 tablespoon) lemon juice; – 900 grams of apples; – 40 grams (4 tablespoons) butter; – 55 grams (1/4 cup) sugar; – 1 portion of French shortcrust pastry Pate Brisee.

To prepare the Pate Brisee shortcrust pastry, you will need: – 175 grams (1 and 1/4 cup) of flour; – 2,5 ml (1/2 tsp) salt; – 5 ml (1 tsp) sugar – optional; – 120 grams (1/2 cup) butter, chopped into small pieces; – 45-120 ml (3-8 tablespoons) cold water.

Prepare the dough first. To do this, combine sugar, salt and flour in a large bowl. Add butter. Knead the dough with your hands. Add water 1 tbsp. l., stirring until it turns out to form a ball of dough. Do not stir, otherwise the dough will be too tight. If it turns out to be too crumbly, add water, and if it is too sticky, add flour. The dough should be elastic and soft. After forming a ball of dough, cover it with cling film and place in the refrigerator for several hours. 10 minutes before the dough starts rolling, it will need to be removed from the refrigerator.

Roll the dough into a circle about 30 cm in diameter. Cover with plastic wrap and refrigerate (on a baking sheet, tray or board). While the dough is in the refrigerator, prepare the apples. Rinse, peel and cut into wedges. Mix apples with sugar and lemon juice.

Apples for pie filling can be brushed with apricot jam, diluted cognac or rum

Melt the butter in a wide skillet. Place the apple wedges in there and cook for about 12 minutes. When the apples begin to turn golden brown, remove them from heat. Preheat the oven to 190 degrees. Remove the dough from the refrigerator and transfer it carefully to a baking sheet.

Place the apples on the dough, 5 cm away from the edge. Lift up the free edges, pinch them unevenly, and then place them on the apples. Place the baking sheet in the oven and bake the pie for 35-40 minutes.

To make an apple pie according to the French recipe for the dough, take: – 200 grams of flour; – 100 grams of butter; – 40 grams of sugar; – 2 eggs; – 10 grams of vanillin.

To prepare the filling, take: – 4 apples; – 50 grams of butter; – 100 grams of sugar; – 1/2 tsp. ground cinnamon – optional.

If desired, you can flavor the filling to taste with cinnamon, vanilla, chopped orange or lemon zest

Sift flour into a large bowl. Grate the butter on a coarse grater, then gently stir in the butter and flour. Add sugar to the dough. Mix these ingredients well with your hands. As a result, you should end up with a so-called oil crumb. Separate the egg whites from the yolks. After that, add the yolks and vanillin to the dough. Roll the dough into a ball, then wrap it in plastic wrap and put it in the refrigerator for half an hour.

Now start preparing the filling. Rinse the apples, peel and core. Cut the apples into wedges and drizzle with lemon juice to keep them from darkening. Next, take out the dough and roll it out 5 cm thick, with a diameter larger than the shape. Transfer the dough to the mold, then gently press it into the mold with your fingers. To remove excess dough from the edges, slide a rolling pin along the edge of the form. This will make the edges beautiful and even.

Arrange the apple slices in a shapely form. Drizzle with melted butter, then sprinkle with sugar or a mixture of cinnamon and sugar. Put the pie in the oven for half an hour, preheated to 200 degrees. When the pie and apples are browned, remove the dish from the oven, cool slightly and serve.
