Do you make soups from chanterelles?

Of course, soups are made from chanterelles – there is not even a classic recipe, there are too many of them. They cook both puree soups and self-sufficient mushroom soups in chanterelle broth and with meat.

It would seem that such a fragrant, bright and self-sufficient mushroom – but still doubts arise, are chanterelles good for soup? Still, we are used to frying chanterelles with potatoes – in fact, this is a classic dish of chanterelles. But rest assured – chanterelles are very pleasant in the soup and easily (unlike many oily mushrooms, for example) combine with other foods in the soup. You can cook cheese soup with chanterelles using melted cheese or several types of cheese at once, then croutons are served with the soup. You get a very deep taste if you boil chanterelle soup in beef broth, preferably with bone. You can cook it lighter and use chicken for the meat component of the mushroom soup.

Potatoes are added to almost all soups with chanterelles – of course!

Even frozen chanterelles are perfect for soup – do not hesitate, if the freezer is of good quality, the soup will be fragrant and tasty, like fresh mushrooms!
