Traditional Russian condensed milk is an unforgettable delicacy that can decorate any dessert dish. To prepare it at home, you should use a special technology.

Condensed milk: cooking at home

Classic Russian condensed milk will require only 3 ingredients for cooking:

– 1,2 liters of milk; – 0,4 kilograms of sugar; – 1/3 teaspoon of soda;

Pour 1,2 liters of milk into a spacious aluminum saucepan or bowl, add 0,4 kilograms of sugar and a third teaspoon of baking soda. It is not necessary to add the latter, but in this case, condensed milk may come out with lumps, and thanks to soda, the product will be of a uniform consistency. Mix all ingredients thoroughly and place over medium heat.

It is better if the milk is steamed, with not yet settled cream. This will make the condensed milk even tastier.

Bring the condensed milk base to a boil, stirring with a wooden spoon or spatula, then reduce heat and simmer. When boiling, the milk will gradually evaporate. Within an hour, it will turn yellowish, then begin to thicken and take on a slightly brownish color. At this stage, you need to be careful and try to avoid boiling and burning. Turn off the gas every 5-7 minutes and observe the mass. If it begins to thicken as it cools, you can end the cooking. Remove the condensed milk from the heat, cover and leave until it cools completely. In total, the preparation of classic homemade condensed milk will take about 1-1,5 hours.

Please note that the final volume of finished condensed milk must correspond to the original amount of sugar in the recipe. After cooling, transfer the condensed milk to a jar, close and roll up.

In no case roll up hot or even warm condensed milk, otherwise condensation will form on the inside of the lid, which will eventually grow into mold on the surface of the product

How to cook boiled condensed milk

Try to cook a popular dish in Russia – boiled condensed milk. Such condensed milk is usually no longer added to tea or coffee, but is used as an independent dessert or filling in homemade buns and cookies. It tastes like caramel candy “Korovka”.

The easiest way is to cook condensed milk in the microwave. To do this, you need to open a can of condensed milk (or just not roll up a recently prepared product) and pour all its contents into a deep bowl into a bowl. Boil condensed milk on medium power for 15 minutes, stopping and stirring every 1-2 minutes.
