How to make a Greek salad with olives and pumpkin
Modern salads with Greek sheep-goat cheese (feta) are an extremely popular dish in Russian cuisine. They are prepared with pleasure by housewives, and when they are very busy, they use the service of delivering such salads to their homes. The classic dishes are hearty and savory snacks with olives, oregano, vegetables, which are constantly enriched with products from local gardens and markets. So, feta or feta cheese is interestingly combined with baked sweet pumpkin, and oregano is often replaced with seasonings more familiar to Russian housewives.
Try making a pumpkin that will add an amazing flavor to the original salad recipe. To begin with, cut a ripe pumpkin in half, carefully remove its seeds and pulp with a spoon, and cut the skin off. Chop into small cubes of equal size, then dip them in olive oil with spices and seasonings (selected to taste) and bake in the oven on a baking sheet. Optimum temperature + 200 ° C. After about half an hour, the orange pulp caramelizes, and you can take it out and cool it first at room temperature, then on the refrigerator shelf.
Stir the following ingredients thoroughly for salad dressing:
– cold pressed olive oil (3 tablespoons); – freshly ground black pepper and cayenne (on the tip of a knife); – table salt (to taste); – wine vinegar (1 tablespoon); – finely chopped purple onion (1 head).
Place the washed and dried spinach leaves in a salad bowl and place the pumpkin, cored black olives rings and small feta cubes on top of them. Greek cheese can be used pickled, after draining the liquid through a sieve.
