Bird cherry cake: a song on your table. Video
Bird cherry flour, which is dried and milled berries of common bird cherry, is a real storehouse of vitamins and minerals. Bird cherry flour baked goods are not only very tasty, but also healthy. You can even bake a real cake.
Recipe for making bird cherry cake with cherries
Ingredients for the dough:
– 100 grams of milk; – 100 grams of wheat flour; – 2 chicken eggs; – 100 grams of ground bird cherry; – 100 grams of granulated sugar; – 1 teaspoon of baking powder.
For the cream:
– 150 grams of unsalted cream cheese; – 250 grams of sour cream; – 100 grams of fresh, frozen or canned cherries; – 200 grams of granulated sugar.

Pour cherry flour with warmed milk (milk should be hot, but not boiling) and leave for an hour. Add egg yolks, ground with sugar. Pour sifted wheat flour, baking powder into the resulting mixture and mix well. Gradually stir in the egg whites, whipped into a thick foam. Pour the dough into a greased mold and place in the oven, preheated to 180 degrees, for 35 minutes.
The finished cake should be cooled, then with a sharp knife cut the crumb out of the cake without damaging the bottom and leaving the sides along the edges and in the middle. Beat 150 g of sugar with sour cream. Put the cherries on the cake, alternating with cut out pieces of dough, pouring sour cream and lightly pressing with a spoon.
Top it off with cream cheese, whipped with the remaining sugar. Decorate the cake with cherries and sprinkle with the remaining crumbs.
Recipe for bird cherry cake with currant impregnation
Ingredients for the dough:
– 3 chicken eggs; – 400 grams of milk; – 200 grams of ground bird cherry; – 200 grams of wheat flour; – 2 teaspoons of baking powder; – 200 grams of granulated sugar.
For syrup:
– 200 grams of currant jam; – 100 grams of water; – 30 grams of liqueur, brandy or vodka.
For the cream:
– 200 grams of sour cream; – 50 grams of granulated sugar.
Dissolve the baking powder in warm milk and add the yolks, ground with sugar. While stirring, add ground bird cherry and flour. Mix well. Then add well-beaten egg whites into the dough. Divide the resulting dough into 3 parts and bake each cake for 30–35 minutes at 180 degrees on a greased baking sheet.

Boil currant jam with water, add brandy or liqueur and cool. If the jam is too thick, the amount of water can be increased. The impregnation should be moderately liquid, but also not soak the dough too much.
The resulting syrup must be thoroughly saturated with each cake on both sides. Beat the sour cream with sugar and also coat the cakes on all sides. Finally, garnish the cake with chocolate pieces and fresh berries.
