Ayurveda: fruits, vegetables, nuts and when to take them

According to Ayurveda, food is not classified into carbohydrates, fats, vitamins and minerals. It should have a pleasant aroma, be tasty, fresh, carry information about life, not violence. It is also important to consider when is the best time to eat your food. Fruits are recommended to be consumed separately from all other food. Wait at least half an hour before moving on to another meal. The best time for fruits is in the morning, they should be the first meal of the day on an empty stomach. It is not recommended to eat fruits for dessert, as this causes a fermentation process in the stomach. Ayurveda says that the best time for citrus fruits (lemon, grapefruit, orange, tangerine) and pomegranate is between 10:00 and 15:00. Watermelon is consumed strictly separately from other fruits and the time for it is from 11:00 to 17:00. All berries, with the exception of strawberries, are good in the morning. Strawberry time – until 16:00. 

Dried fruits are suitable for use at any time, but breakfast is ideal. Eat dried fruits with nuts, seeds, but not with fruits. As a rule, fresh fruits are recommended in the summer, and dried fruits in the cold season. Pitta-dominated people can eat fruits in any season. Walnuts, almonds, pistachios are recommended for use at any time, while hazelnuts and cashews are more suitable at lunchtime. All vegetables are predominantly lunch food. However, beets, cucumbers, zucchini are suitable for consumption starting at 10 am. For dinner, potatoes, tomatoes, purple cabbage, eggplant and radishes are not desirable. Instead, in the evening, it is permissible to cook peppers, carrots, beets, green cabbage, cucumbers and turnips. Raw salad is a great dinner option for Pitta, boiled vegetables for Vata and Kapha. All grains and legumes, with the exception of buckwheat, are served at lunchtime in accordance with Ayurveda. Bread is also eaten for lunch. Spices for the morning: cinnamon and vanilla. All types of peppers are only good for lunch when the digestive fire is ready for spicy food. Any spicy dishes for dinner should be avoided. Ginger, paprika, and nutmeg are also common dining spices.
