Four Swedish chefs – Titty Kvarnström, Niklas Ekstedt, Jakob Holmström and Anton Buer – who are Michelin stars invited people to leave cafes and restaurants in search of delicious food. They have created a unique project that is transforming the whole of Sweden into an exquisite outdoor restaurant.
In Sweden, you can easily and quickly get into the wild. Edible Country is a new restaurant concept in which diners have to dig their own groceries from the forest and prepare their own meals.
The chefs have developed a special menu depending on the territory and season, as well as original recipes for each dish. Thus, customers can prepare forest broth with perch and herbs or smoked char with chanterelles, juniper berries and sour cherry.
Finding food in the forest has long been an integral part of modern Scandinavian cuisine, and the Edible Country project is one of the spurs for food tourism in Sweden. Customers can book a handmade wooden table, equipped with all the necessary utensils and kitchen utensils for cooking, in different parts of Sweden, each with its own unique characteristics and gifts of nature.
All you need to take with you is some oil, honey, salt, pepper and nice boots. The project is completely free.
